He doesn’t like very expensive ingredients being turned into very lackluster tasting dishes. He judges them based on if they have the passion for it and if they use their ingredients correctly.

He told people if it was no good, and he knew what to expect from each cook at different levels in the competition. Joe was almost just trying to put down as many of the contestants as possible, maybe so people tune in and watch the show, or so the producers can use a couple of his lines for the commercials prior to episodes airing. I don't truly think he is a bad person, I've seen stuff from him outside of masterchef and he seems alot more down to earth and relaxed off this show. But the way he comes across in this show, even if it isn't 100% all of him and some of it being to live up to it being a dramatic television elimination cooking show, compared to a show where it's literally step by step just cooking dishes without critiquing and judging everything- I still think that there is a part of him that enjoys feeling in control of everything when he gets the chance. He likes having g the authority over people he doesn't know well, and thinks and truly believes he knows more about cooking than all the competitors that come to the masterchef kitchen. That along with him just having one of those faces you just hate to see, is why so many people dislike him.

I know, right? If I were in Dustin’s shoes, even if I didn’t win the competition, I would take one of the greatest chefs in the world devouring my dish as an achievement in itself.

Check out Eric Greenspan, famous for sandwiches. Yeah, Gordon has an affinity for sausage rolls, but it could've been executed improperly, whereas his reaction would not be the same. I work as a professional chef. You don't just pick a dish you like based on simple entropy, everything put into it shapes how well the dish is received.
