For exposure, do you prefer linear gain, offset/printer lights, or the HDR global exposure? Do they all work similarly? Is any one more “accurate” or subtle than the others?

Linear gain, hdr exposure wheel, and the exposure slider in the RAW panel should all be identical if you're color managing correctly. Offset on a log image will behave similarly to an exposure adjustment in the highlights but tends to crush the shadows when lowering, and tends to lift the black point when raising it up.
