If you are thinking about Easter, you probably imagine Chocolate Bunnies first, but these healthy Granola Easter eggs are a tasty and nutritious alternative that will delight your whole family. It is also great fun to prepare these eggs with the children.
Ingredients for 14-15 eggs:
200 g oat flakes, baked at 180⁰C for 8 minutes
40 g crushed flax seed
75 g brown sugar
90 g peanut butter
60 g coconut oil
90 g honey
60 g sunflower and pumpkin seeds
70 g almonds, chopped
100 g chocolate
Directions:
Mix oat flakes, flax seed, brown sugar, peanut butter, seeds, almonds and half of the chocolate. Mix very well.
In a pan, melt honey and coconut oil until small bubbles appear.
Add honey and coconut mixture to the other ingredients.
Add the remaining chocolate.
To make eggs, use an egg shaped cookie cutter and two spoons.
Bake for 15-17 minutes at 180 ⁰C.
Leave the granola eggs in the tray until completely cool and then remove them from the tray.
Decorate with gel food coloring.
