I just started watching you and love it! You have taught me things I didn't know about lambs quarters. I have cooked with them before. An older women gave me the following recipe . First start with a pot of cleaned small new potatoes with just enough water to cover them. Then add a good dose of butter, salt and pepper. Cook them till tenderThen in another pot place a large amount of fresh lambs quarters in a pot with a little water. Remember lambs quarters cook down like spinich

I am 74. My mother told me long ago that during the depression they only had pickles during winter and were so hungry for a salad by early spring. As soon as the wild greens came up, she and her sisters were out collecting lambs quarter and dandelion leaves and flowers for salads several times a week.

I just uprooted some lambs quarter a few years ago and planted it into trait rows in my Back 2 Eden Garden and It grows about 10 feet tall in the woodchips if you don't prune it (I don't). I dont forage more than once. When I find a good healthy looking edible wild plant or weed(dandelion, purslane,plantaim etc) I uproot it, plant it into my Back to Eden Garden and save seeds and plant again next year. My Mother was raised in Western Oklahoma. In the Depression, they ate Lambsquarter all the time. As a kid, my Mom saw a patch of it and stopped the car and went and picked it. Needless to say, she loved Lambsquarter.

I just have to say, I absolutely LOVE Lambs Quarters and many other wild weeds, but I really enjoyed reminiscing with the robins egg blue metal kitchen sink and cabinets! We had them in our home growing up. Our bottom sink and cabinets were white but the top cabinets were all the robins egg blue. Just so cheery!

Years ago I had my garden, a fabulous garden. I became injured and unable to tend to my garden and the "weeds" overwhelmed it. I was finally able to make my way out to see the mess. "weeds" 8 ft tall with large leaves and squareish stalk, dense and fence to fence. I began uprooting it all in hopes of salvaging something. In my quest to discover just what this intrusive plant was I discovered ... yep, Lambsquarters , a bumper crop for certain. Rats. I allowed a section of my side yard to "develop" in it's natural way ... more Lambsquarters, thank you Father. I put lambsquarters on my sandwiches in my Ramen, anywhere and everywhere one might use lettuce or spinach. I move a few years ago and finally located some sporadic growth and have attempted some propagation but no luck just yet. I miss my Lambsquarters.

We have eaten these since i was a girl. We sold them at the local farmers market. The old traditional farmer would laugh and scoff "thats dang pig weed! And yur tryin take make munee on it?" Well we sold lots of bags of it way back in 1976. I use it steamed with s&p storeys but my favorite is making spanikopita! Yep its awesome. I sometimes mixed it with Swiss chard if the chard is up. You two are fun and delightful. Im happy you are making your great videos. All great stuff for people to be inspired by. You've both done a fantastic job on the raised bed. My kale and barrasicas were a wash this year. I have never seen so many flea beatles. Okay have a wonderful day. May God bless you and watch over you in the days ahead.

Stacey you are nothing short of amazing. I am going to dehydrate these from now on and use them in salads and soups. I LOVE the sauté recipe. This is very old information and you just bring it front and center and remind us all to forage in our own back yards. Thank you and Doug for all you share with us! 💕

Scissors are great in the kitchen. We figured out the scissor trick for cutting up chicken and leafy greens for salad a few years ago. :)

I just discovered this coming up everywhere in my grow bag garden! I think the seeds must have been dormant in the soil we purchased. So glad I looked up what it was before pulling it out! I'm going to carefully remove the seedlings and plant them in their own corner of the property 🌿

So excited to see this. I learned about it in one of your other videos you did, you were out looking for Queen Ann’s lace I think? Or something like that. Anyway...I’ve looked and looked and couldn’t find any around me. Go figure. Well I finally found some seed for it and it’s GROWING!!!!! I’m so super excited to have it. Once it’s a wee bigger I’m going to transplant it in an area it can really take off. I didn’t know about the stems so I’m really excited to try those now. Thank you soooooo much! You’re just awesome! Lambsquarter grows wild all over my yard here in SW Ohio. I have been telling my husband for years it's not a weed and not to pull it up. I never thought to try to contain it in it's own patch or dry it but I'm going to now! I love it lightly sauteed in coconut oil with a little garlic or ginger and a spritz of lemon juice or ACV. I didn't know the stems and seeds were edible so I'm excited to experiment with them this year. As always, thanks for sharing your knowledge!

jmesserschmitt In NW Ohio I think this is what my step-dad called "Redroot", it looks like it. Can you confirm? There's a young clover with little yellow flowers that we call "Lamb's Quarter" it's edible and tastes kinda like green apple skins.

One of many things I like about your page; you don't seem hypocritcal. I heard a person disparagingly say 'if you're going to give up modern things, give them up totally or you're a hypocrite'. Silliest thing I ever heard! If y'all (and my family, too, I might add) needed to cut yourself off from thecnology or anything 'store bought', you could. It would be super difficult, but could be done. We each have to decide how deep we want to be in this modern world. I refuse to place my well being in the hands of people who could care less if I live or die as long as they get part of my money.

I have foraged lambs quarter in southern California. My dad taught me about lambs quarter when I was a kid. Ours doesn't look anywhere as good as yours though, must be all the glorious rain you guys get. It is delicious, very similar to spinach. Thank you for doing this video so more people learn about it!

It's such a pretty green where you have it planted! It was one of your videos that finally got me to try Lambs Quarters. I have it growing right by my kitchen door now. I put some into every salad and mix it with spinach and I put it into soups. It tastes great, and I don't have to plant it. It's a "volunteer"! Someday I am going to get a sun oven. Thank you for showing how to use the stalks and how to dehydrate it. Do real lambs like to eat it too? I'm vegan, so I don't eat lamb. But I'm jealous you get to spend time with them for real. Lambs are fun to watch.

I had a very long discussion with a neighbor who thought he was doing me a favor by cutting down the weeds next to my garage. He just shook his head when I told him that I ate it in salads and cooked in my stir fry. I dehydrate it then make it into a powder that I add to pita bread in the winter. I never thought about cooking the tender stems. Thanks! I learned something new.

I was introduced to Lamb's Quarters being edible when I married. My MIL laughingly place it in front of me at one of our first family meals and everyone stared at me waiting for my reaction. I loved it. They called it PIgweed, which didn't sound good, but it sure tasted great! She just cooked the young leaves up like spinach and dripped on a bit of butter and vinegar(sometimes lemon juice). We have always caught it young and ate the leaves but now I want to dehydrate a batch and also try eating the stems! Thanks for another great video!

Used it in my smoothie. Haven't noticed them coming up this year. I do like the idea of a Lambsquarter patch.

Was so happy to see some springing up around my trees in the front yard. I usually "wilt" it with a dressing that has been passed down, in the "abouting method", very similar to the way Stacy cooks. You get your lambs quarter, and while it is being cleaned, fry up some bacon that has been cut up into small pieces. Take the bacon out of the pan and put it to the side, put about as much sugar as you have grease, into the pan and stir it up, then put in some vinegar which will make it boil up a bit, so watch out for that. turn down the heat and stir until everything is well mixed and heated. Then pour over the washed lambs quarter, it will cause the greens to wilt about half way down. We also used this dressing on leaf lettuce from the garden. When my children were growing up, they liked it best on the lambs quarter. Thank you for all you do. Blessings

I'm blessed with one big patch that I threw out last year and let it go to seed....so I jarred up 3 half pints early one. Got tons more that I'll harvest and let rest go to seed. Nice to have it all in one patch :-) The stems also taste mighty fine with sesame seeds, garlic powder etc. Also had some volunteer Kale come up so I jarred up some half pints of it also. I love lamb's quarter and it is coming up everywhere this year much to my delight. Though mine are pretty much just seedlings right now, we are a ways behind you, I have already pinched off a few tops just to snack on as I am passing by in the garden. Great information and recipes! Thank you!

Borage is one of those things I add to my mixed greens blend that I dehydrate and use through the year. Though I have not used it in a hot tea, I have infused it in cold water along with mint and it is very refreshing. It would be very good in a hot tea as well. I like to eat the leaves fresh too, even though they are a bit pokey and the flowers are so tasty and pretty in salads

I find they taste more like pea greens. Absolutely love lamb's Quarters. I plant them everywhere I have space. Amaranth is a close second. Amaranth greens are so hearty and delicious as well. Many blessings from South Africa. 🙏

I’ve never had lambs quarter before. I’ll be getting some seeds from Bakers Creek and growing my own patch so I can give it a go. I love spinach so I know I’ll love it. Thanks for the tip. Debora Pettigrew I just came back from the website and started to see what else it was called because I only found some related to lambs qaurter on their site. I looked up that and pigs weed to no avail so I came back here to see what other names it has. I hope to find it. If you find it first let me know please. But bakers creek was my first look.

I've gotten as far as identifying it. Then kinda forgot about it lol. There is so much out there in the foraging free world. So thank you so much for the reminder and some of the ways to use it Stacey😊

I found a good size patch behind my shed. I cooked it up with some eggs garlic and a few other seasonings. It was so good. I did not know you could eat the stalks..i learned something new. Thank you Stacy.

Thank you Stacy, I hadn't realized the stems were edible too. Lambsquarter suddenly showed up in my garden, love eating the leaves. I will be designating a 'patch' too so I can grow even more of it. When I roast the leaves in an iron pan with some oil It reminds me a little of the umami flavor roasted seaweed has.

Visiting older videos and learning a ton of stuff. I have not seen any lambsquarter around our property. The recipe that you cooked like the asparagus looked amazing. I learn something new at every video.

I love watching you! You have taught me things I didn't know about lamb quarters. An older women gave me a recipe for this tender jewel. First place small new potatoes in a pot of water -adding a good amount of butter, some salt and pepper. Cook the potatoes till tender. Then take the potatoes out of the pot and cook down the potato broth till buttery and rich - adding potatoes back to same pot . In a bigger pot, place a large bunch of lamb quarters ,and add enough water to cover the bottom of a pot- remember lamb quarters will wilt like spinach. Let this mixture cook until water turns green and discard this water. Pour more water in bottom of the pot and continue to cook the leaves till water just turns green again. You will want to pour this water off again.At last , stir greens into potato mixture. Serve hot. I was told the greens are too bitter unless cooked twice.
