The success of this terrine in the way it holds together is brought by three tactics, as I see it: 1.) THINly sliced vegetables, 2.) The used of extra virgin olive oil, a monosaturated oil, throughout, which conceals in cold temp, and 3.) The weighting with a heavy press. I have made many vegetable terrines in my career but I never tried working without a net like this chef just demonstrated--no egg yolk baked in, no thickening gimmicks. Bravo up to Heaven, Chef!

Can't believe that terrine! Used to make veg terrine and trying to set it with agar agar in a pepper purée was a nightmare! Wish my chef had seen this at the time haha. Beautiful
