Today, I'm going to show you an authentic recipe for the famous Greek Khirtaki Salad! The Greek Kritharaki Salad is a delicious blend of rice noodles, fresh vegetables, and Mediterranean flavors. The small rice-shaped noodles give the salad a pleasantly juicy texture, while tomatoes, cucumbers, olives, feta cheese, and fresh herbs add a spicy and refreshing touch to the whole dish. This salad is a perfect side dish or even a light meal for warm summer days.

Ingredients:
500g rice noodles
1 tablespoon salt
100ml olive oil
Juice and zest of 1 lemon
2 garlic cloves
20ml balsamic vinegar
200g cherry tomatoes
1 red bell pepper
1 spring onion
1 cucumber
200g feta cheese
200g Kalamata olives
2 tablespoons capers
1 tablespoon oregano
1 teaspoon pepper
20g honey
1/2 bunch of basil
Parsley for decoration (optional)
Instructions:
Cook rice noodles in boiling salted water for about 10 minutes, drain, and transfer to a large bowl.
Mix warm noodles with olive oil.
Combine lemon juice, lemon zest, balsamic vinegar, and chopped garlic.
Cut cherry tomatoes in half, dice the bell pepper, spring onion, and deseeded cucumber, then add them to the noodles.
Pour honey over the salad, add diced feta, Kalamata olives, and capers. Season with oregano and pepper.
Pluck basil leaves and add them to the salad. Mix everything well.
Let the salad marinate in the refrigerator for at least 4 hours, preferably overnight.
Before serving, decorate with fresh parsley according to your preference.
