A green chile made of roasted chiles, tomatillos, and cilantro provides a bright and fruity base for the chicken in these light and tender tamales
These tamales are really moist and the filling is full of flavor. You can adjust the heat to your liking. The directions include thorough directions for wrapping the tamales or if you prefer, you can use your favorite method. If using store bought prepared masa, make sure to use Masa for tamales and not Masa for Tortillas
Everyone makes masa different & here i show you my method. Let the masa sit for 10 minutes before assembling the tamales for better results

Ingredients:
For sauce:
3 lbs tomatillos(green tomatoes)
2 jalapeños & 3 chile serranos(add more for more spice)
Add in the onion & garlic from where the chicken was cooked
3 fresh garlic cloves
6 peppercorn
6 coriander
1 tbs chicken knorr
1 tsp salt
3 cloves
2 tsp whole cumin seeds
handful of cilantro
Small amount of the broth from where the chicken was cooked
For the chicken:
5 chicken breast
Piece of onion
1 whole head of garlic
4 bay leaves
Salt
For the masa:
2 lbs manteca
1 bag (4oz) maseca
2 tbs baking powder
1 tbs salt
Broth juice from the pot where chicken was cooked(i used about 16 cups)
FYI: broth should be hot
Optional:
Cheese(i used monterrey)
