Green curry is a classic Thai dish that's famous all over the world. You may have tried making the curry using store bought paste, but perhaps it's time to try making it from scratch? :) It's really a fascinating experience to see the transformation of the ingredients little by little, and you will feel so proud of the finished curry at the end!

About Pai:
Pailin “Pai” Chongchitnant is the author of the Hot Thai Kitchen cookbook, co-host of a Canadian TV series One World Kitchen on Gusto TV, and creator and host of the KZfaq channel Pailin's Kitchen.
Pai was born and raised in southern Thailand where she spent much of her "playtime" in the kitchen. She traveled to Canada to study Nutritional Sciences at the University of British Columbia, and was later trained as a chef at Le Cordon Bleu culinary school in San Francisco.
After working in both Western and Thai professional kitchens, she decided that her passion really lies in educating and empowering others to cook at home via KZfaq videos, her cookbook, and cooking classes. I am lucky to live in a big city with a big Thai population - didn’t take long to find all these ingredients at an Asian grocery store. And WOW WOW WOW this is the only green curry paste I’ll ever use! Used for the best green curry chicken I’ve ever had. Can’t wait to try it with other Thai dishes. Thanks!!

I’ve always loved Pailin’s videos, but I virtually came running here after uncle Roger roasted Jamie Oliver because I wanted to remember what it’s like to love Thai green curry 😆

Just made this paste. However, I was tempted to taste the paste and it was NOT good. I wasn't even sure the paste was correct. But once I used it in the cooking the flavor was spot on. The only thing I omitted was the cumin because I never liked the smell. I also couldn't find cilantro roots and had to use the stems. Thank you Pai, I have tried several of your recipes and they are so spot on and authentic. I only make minor adjustments here and there but always use your recipes as the foundation. I'm glad you use the shrimp paste and stinky stuff in a lot of your recipes like it should be done. So hard to find authentic Thai where I live where it's not diluted. I was able to cook so many Thai dishes from your channel.

Thank you, thank you. I have a boarding house where I house international students that come to Canada for school. Just recently I have had a student come join us from Thailand. I used your recipe here for green curry and he told me it was better than home. I have also used your recipes for Jok and Larp for him and he loves them. I find myself now making Jok twice a week so he has it for breakfast everyday.. I love your videos and will keep watching so I can learn more. We love Thai food.

Cool, I like adding a half teaspoon of clear Sambucca to green curry right near the very end to give a hint of anise flavour to in the likely event that people don’t have access to Thai basil. I grew a Thai basil last summer in Ontario. I dried the leaves but wish I’d frozen them instead. Will do that this summer.

Palin, LOVE your channel. We just made 4 cups of your paste from fresh veg from the garden. Jalapeños, shallots, lemon grass, and garlic. All else was store bought. We eat Thai all over the US. This recipe is spot on and the best my wife and I have tasted. Thanks for the great instruction.

I made the paste today, but I tripled the amount, as I intend to use it in several batches. I tested the paste by cooking a tablespoon with about 400 grams of firm tofu and it turned out great. Thanks for the recipe.

Thank you! I've made this about four times, and it turns out perfect, but every time, I forget how time consuming it is. Especially to chop and mash the lemon grass and galangal. I've leaned into doing most of the grinding by hand, with a little help from a food processor or blender. For anyone else with tendonitis ;)

I made this paste exactly as is then made a green curry with potatoes. Couldn't be better. OMG. Soooooo nice. Much better than one from thai restaurants. You should try it.

Loveeeee Thai food.thai curry and rice is comfort food for me.im an Indian from the coastal areas of Maharashtra and we use a lot of coconut in our cooking.

Outstanding recipe. Froze well and was fantastic despite having to use jalapenos, culantro and ginger--and I know how the chef feels about subbing ginger for galangal. Made big enough batch that food processor worked quite well.

Came here because I’m following your written recipe and made a mistake-my local Asian grocer only had dried lemongrass, and I didn’t pre-grind it or rehydrate it before I used it…I’ve been mortar and pestle-ing my paste for over an hour, and it’s barely broken up at all 😂

When I was looking for the authentic recipe of Thai green curry, I stumbled upon your earlier videos! I do remember you mentioning that people in Thailand generally use store-bought pastes coz the tedious process making the paste involves! But I'm glad you finally showed the green curry paste :) Also love the fact that you use a peste and mortar! I'm an Indian and I have a similar pestle and mortar at home :)

I find it easiest to grind the kaffir lime leaves first whenever I make the paste then dish aside, grind chilies then dish aside, then grind galangal, then lemongrass, then cilantro and Thai basil, then put lime leaves and chilies in, then grind shallots then garlic then incorporate shrimp paste.

Thank you Pailin for these recipes! I just made green curry and made my own paste. It tastes wonderful even though I didn't find shrimp paste and substituted galangal with ginger. Amazing with sweet green peas, tofu and brocolli! I will definitely try your hot thai chicken :) as well! Amazing cooking and thank you for all these delicious recipes!

I would recommend Korean miso called "dwaenjang" or another Korean soybean paste called "cheong guk jang". Both have a much deeper, briny flavor than Japanese miso, but also have that musky/funky aroma that gapi is known for.

huh ? no way.. Korean soybean paste and Japanese miso taste totally different from Gapi... gapi has spice and prawn taste.... those Korean and Japanese paste has none of those.. it is just soy or miso..

@@synkahlan It's true they are very different from gapi. My gapi sticks up the kitchen with a pungent fermented shrimp-like aroma that I love. High quality Korean bean paste [dwen jang] has its own briny, fermented funk, but of course it isn't the same. Perhaps an even better substitute is another Korean bean paste called cheong guk jang. It has a stronger fermented smell and is much less salty, but when combined with a good fish sauce into a Thai curry paste prior to cooking, the effect is surprisingly similar to gapi. I recommend dwen jang first because it's more readily available at generic Asian grocery stores.

Thank you for the receipe. I do green Thai Curry paste since years and it helped me to cook my favourite dish incl. controlling the amount, but also varying the combinations, e.g. w/ grilled lamb steaks preparred separately or mango salads etc. The green curry made with self-made green thai curry paste looks and tasts pretty fresh with a warm green-yellow tone and not olive. In second case, I would leave it.

I love Thai food and i usually have at least one Thai dishe when i get to travel. But i recently found garlic and onions makes tummy boated. Can i exclude if i make green curry using ginger for this recipe. Im sorry i know it sound weird.

That's a tough one - bought this in Chinatown here in Vancouver and we can't find a similar one on Amazon. She also likes krokcraft.com/ but that's not the one she's using here. If you find one online let us know, and otherwise good luck in your search! :) Cheers, Adam

not gonna lie. I would use this paste like a pesto for my pasta. Been done that and it's really good. Cook the paste in oil and then add coconut milk or you can do cream but mind the amount. And then put your half cooked pasta in because I like to finish my pasta in the sauce.

2:15 " don't confuse this with the other kind of shrimp paste which is orange and oily, that shrimp paste is tamale" but if you confuse it with tamales then just eat the tamales. tamales are awesome

I have 2x curry pastes that the flavour is lacking. I want to boost them but I have no idea what ingredient they are lacking. Help. I have MAE PLOY brand, but I want it to taste like MAESRI brand. I want to add something and make it so it would be more favourfull instead of just spicy.

I think using msg could be good, but you can use miso paste or just skip it, you're gonna add fish sauce when making the curry anyways. :)

What do you guys do about all the extra moisture in the paste? Mine is really wet, and it thinned out the curry a bit. Should I cook off the water before adding any other ingredients? Thanks.

For fish sauce you can try a little bit of the Golden Mountain sauce. For shrimp paste ??. You might be able to get some umami from mushrooms. Maybe a mushroom soy sauce. Keep an eye on the overall salt levels though.

Dear Pailin may I say I love your cooking and you inspired me to love Thai food . I have watched you cook many times but I always want to cook Thai food but when I go to buy curry paste it has something that you usually don't put in your curry paste it is coconut milk. Is coconut ok in curry paste and do people put coconut milk in curry paste .

Aaron Bhikhai In Thailand I have never seen anyone adding coconut milk in curry paste. Coconut milk when making curry, yes. Coconut milk when making paste, no. Also all the store-bought pastes I see have no coconut milk in them. What kind of products you're talking about?

My Thai cookbook condemns frozen kefir leaves and the zest of the fruit because freezing destroys the volatile oils. If you’ve ever tried to make a green curry with freeze-dried kefir leaves, the result is EVEN worse. That’s right- the volatile oils were destroyed in freezing!

Hi, I want to make a very very mild paste so my 3 and 6 years kids can be introduced to thai food. Can I just omit the green chilis? Also, the only shrimp pas I can find is the Filipino one. Could I sub by anchovy paste? Thanks for all your videos.

I tried to add a bigger milder pepper (for a greener curry without making it too hot) to the paste, and I cut it roughly before crushing it. Bad idea... The pepper skin is impossible to crush or grind and I'm left with big chunks or green skin in the paste 😅

Most of the ingredients are not available in my country so I have to stick to the store bought paste but thank you so much for this recipe!

Alex Chiara Toniolo Here's what you can do :D -You don't actually need Corriander seeds and roots to make a decent curry. I just don't add them since my family doesn't like corriander. -Substitute the Lemongrass with ginger instead -I can't find galangal too so I don't add it. -White peppercorns can be substituted with Black peppercorns. -As she said, you don't have to add shrimp paste (I don't too). MSG would do the same purpose if you still want the effect of the shrimp paste. -You can also substitute Kaffir Lime Zest to normal lime zest. Hope it helped :D

Alex i live in Atlanta. I coudnt find the kaffir lime lead so i used the skin of the yellow lime instead and it worked wonderfully! Other stuff you may find them in the Asian grocery store.I hope:)

I'm in the Caribbean, I can't find the galangal, basil leaves, thai chilies, shallots or the lime but I will try to sub with other ingredients, it won't be authentic but it'll be "my version" lol. I can barely find store bought curry paste, so when I visit the states I usually buy it there. 😩
