Ground cherries make a very delicious jam. Jam is easy to make and is a good way to preserve some of that extra fruit.
The recipe I use here is a hybrid cross with Euell Gibbons recipe in his book," Stalking The Wild Asparagus" my own modifications, and sure jells jam making instructions.
For all my jams I use Sure Jells "Premium Fruit Pectin for Less or No Sugar Needed". I do use sugar in my jams. But what is nice about this pectin is that the sugar to fruit ratio is light on the sugar. Ex.. Strawberry jam using this pectin is 6 cups berries and 4 cups sugar. Using the regular Sure Jell pectin would require 5 cups of berries and a whopping 7 cups of sugar, waaay to sweet for me. The fruit taste is almost hidden by all that sugar.
The less sugar pectin doesn't over power the fruits good flavor and makes a much better tasting and satisfying product.
Here are the recipes:
Original from Euell Gibbons book;
To make jam, crush 1 quart of husked ground cherries and add the juice of 2 lemons, the grated peel of 1 lemon, ½ cup of water and 1 package of powdered pectin. Boil for 5 minutes, then add 4 cups of sugar. Boil hard for a minute or two, or until you get a jelly test; pour into half pint jars and seal immediately.
Here is the recipe as I made it in the video;
App 6 - 7 cups husked ground cherries, crushed ( in small batches)
½ cup water
Juice of 2 lemons
Zest ( grated peel, no white stuff) from one lemon
4 cups sugar
¼ cup sugar set aside to mix with pectin
1 box of Sure Jells "Premium Fruit Pectin for Less or No Sugar Needed Recipes"
Add the water, lemon juice and zest to the ground cherries
Add the pectin to the ¼ cup of sugar and mix together
Add pectin/sugar mix to the ground cherries
Bring mixture to full boil
Stir in remaining sugar, quickly, and return to a full rolling boil
Boil for a full minute +
Put into jars and seal
For the most part I followed the Sure Jells instructions for when and how to add the ingredients. But since ground cherries isn't one of the fruits on their instructions, I just use my own judgement and past experience on how to make it work. And as you can see at the end of the video, the jam turns out perfect.

As a teen in 1980 I borrowed that book from the library. I had never heard of wild foraging ,but liked the idea of it. But when my mother saw it she immediately broke into laughter, which perplexed me. She then explained that Euell Gibbons had been the brunt running jokes on TV game shows, such as 'Match Game' ,and other TV shows in the late 1960's early 70's. Apparently many people back then had thought it was an absurd idea to wild forage, funny how things change and have come full circle and so many are getting back to learning about wild foraging again.

I grew ground cherries the first time this year, and they are SO prolific! I have more than I know what to do with, so I’m going to start with jam and salsa. Thanks for the video!

i just made your recipe and it is perfect. this is a wonderful way to use the under celebrated ground cherry. thank you for taking the time to put together this thorough--and very crunchy--video. i will be writing this recipe down to save for future jamming.

My grandfather was pals with Euell and I ate turtle soup with the two if them. We spooned it from the shells. Will never forget that. I have kept a copy of STWA since about 11 years of age (48 yo now :| ). I also used his recipe to make mulberry pie when I was about 12. :)

Just discovered ground cherries for the first time last year at the Madison farmers market. Can't wait to get them again this year! (and maybe some time attempt to grow them myself) The jam looks delicious!

Thanks for the comment. I just haven't had much luck growing them since I made this video. Last year I didn't hve enough to even make one batch of jam. But I used what I had and filled in with peaches. That turned out pretty good.

Yes, I made two pies and canned about 8 pints or so of the jam. My husband loves the pie,,and the Jam on toast or English muffin. Great stuff. I am growing probably more than double the amount next year. I have saved about 500 seeds or more. =)

With the extra headspace on some of those, you better waterbath it. Also, I noticed a lot of separation in your jars, do you slowly rotate them to keep them mixed up well while they set up? I would think you would have to.

I'm growing them this year because they look SO MUCH like tomatillos and I've had great luck with tomatillos in many climate zones. Looking forward to seeing how they do on the south Oregon coast (climate zone 9b)...we're in that tiny little sliver of land known as the "banana belt" of Oregon. Yay!

If tomatillos and tomatoes do well there, ground cherries should do good also. Best when they turn yellow. Good luck.

greatly appreciated I've watched the whole videos.. wow!! thank u again.. I never have that before but my fiancee have told me that his mom used to plant them on their 600 acre farm. I'm from the Philippines but I've been here in the States for almost 19 years.. I never seen it before.. then I research it I saw your video.. we might have a similar ground cherries looks like in the Philippines but I think it was definitely different.. but anyway thank you so much.. we just started to have our vegetable garden in our backyard here in Minnesota it's to hard to keep up with all this wild animals we have around here the deer often times come in our yard so we put a 7 feet fence so that they can't eat them all.. thank again.. hoping to find it in store so that I can plant some soon enough..

Thanks for the comments. Deer are definitely a problem. They show up here once in a while and can really do a lot of damage quick. If you can't find seeds in the stores, they can be ordered online. Or if there is a farmers market near you, sometimes somebody will be selling ground cherries there. You can save the seeds from one of them. Once you have them in your garden, they will reseed themselves pretty easily, if you don't get them all picked up. Just learn what the seedlings look like when they come up in the spring and you can move some to where you want to grow them......Mark

You are right about being "better safe than sorry" if a person has any reservations about not doing the water bath. But I've done it this way for a long time and have never had any problems. The instructions that come in the Sure-Jell box recommends both ways, except that if not doing the water bath, the jars should be inverted for a few minutes to make sure the lid gets hot enough. Thinking of making a GrCh pie next.Got so many I can't use them up.

Haven't started mine yet so I'll have to get on it. Pretty sure they'll be coming up from last year but can't always count on that. Still have some jam left.

They grow wild on my property,, kinda a nuisance,but like my wild sand plums , wild mushrooms, wild onions, polk salad , i have a variety of goodness

Sounds nice. Mine haven't been producing too good the last few years. But, I guess we just have to take it "one day at a time". Getting too old to worry about such things. In my 70's now and life is getting short.

You still need to boil the jars for 10 minutes...really !! Better safe than sorry. I also make this jam and I boil them after they are jarred. I have never seen a jam recipe or any recipe for canning that did not recommend processing for atleast 10 minutes. Just trying to help. Thanks for the video ! Love my ground cherries !

No, they don't need to be processed. I wash and rinse the jars and put the lids in hot water before filling the jars. I think it preserves without boiling because of the amount of sugar in jams and also the jars are filled immediately after boiling the jam, it's really hot. As it cools it creates a vacuum and that is what causes the lids to seal. Years ago people used paraffin wax to seal jam or jelly. Never tried that, doesn't seem like a good idea for keeping long term. Thanks for watching.

Nice video. I'm going to have to give this a shot. Do you happen to measure if it gets to 220*F? I just tried making some jam, for the first time ever, with my own recipe combinations/steps thinking it would be easy like jello. Man, was I wrong! It was very runny and didn't set at all. I even picked up another pack of that Sure-jell and went through their 'how to fix if runny' steps and it STILL did not fully set. It sets well enough in the fridge, but it is DELICIOUS. I didn't realize things needed to be so precise. As a newbie, I found certain things odd like "Boil for 1 minute and NOT more (or less) than that or else you'll ruin the pectin", but then after you're supposed to stick them in a water bath and boil them for 5 minutes?? Whaaaat? haha. I would probably do the water bath, simply to make it easier to clean up any spills on the jars.

I don't check the temperature at all. I know it all sounds a little strange with the boiling exact stuff but that seems to be important. I've only had one time that my jam turned out too runny for jam. It was elderberry. I also tried the "how to fix if runny", didn't work for me either. Set in the pantry for about a year before I decided it might work good as an Ice Cream sauce. It did. I've picked up a few tips on making jam better. #1. After it has boiled hard for the minute, move it off the burner and let it sit for about five minutes (be sure your jars and lids are ready though). Stir it a couple of times. This will help to keep the fruit from floating to the top in your jars when you fill them. I think it gives it time to let the air bubbles from the boil escape. Seems to work for me. The other thing is that after you put them in the water bath and the time is up, turn off the heat, take the cover off the kettle (if you had one on) and let that sit for another 5 minutes. It lets the pressure in the jars equalize with the water in the canner. When I do the water bath I already have the water very hot when I put the filled jars in it. I bring it to a boil and let it boil for 10 minutes. But once it starts to boil I turn the heat down and try to keep just a gentle boil going, not a full crazy boil. I never used to do the water bath for jams and it may not be absolutely necessary but once I tried it I now do it all the time. Go figure. Hope this helps. I've made 5 batches of jam so far this year and all of them turned out great. Strawberry/Rhubarb, 2 of peach, blueberry and gooseberry. Doesn't look like I am going to get enough ground cherries this year to make jam from them. Hope this helps.

@@wisgardener Wow, thanks for the quick reply and details! I wound up making it exactly like you said here (incl. the water bath tips) and it looks like it's come out GREAT! It set very well. I haven't taste tested it as I'm still working through my older, runnier jars. In those I had about 8 cups of ground cherries, 2 cups sugar, ~1/4 cup of agave, and ~1/4 cup of honey. If I get another harvest, I may try to do one with less sugar again. Also, at the end of the ~1 minute of harder boiling, the temperature did seem to reach ~220*F. Did look a little foamier than yours, but letting it sit helped. I hear some people add butter to cut down on the foam and not that I mind dairy at all, but I have mixed feelings on adding dairy to a jelly. Thanks again, you rock!

Related to tomatoes so they probably would do well any where tomatoes can be grown. They are not frost hardy . They can be a little difficult to start, at least for me. But once you have them growing the seed seeds from fallen fruit can overwinter in the soil and you will have them coming up once the soil warms in the spring. How many plants did it take to fill up those pyrex?

Don't remember exactly, but probably about 4 or 5 plants. They do spread out quit a bit and one plant can get pretty big.

Never had any problems doing it this way as the jars always sealed OK just from the heat in the jam. But lately I have been using a water bath as the last step, as per Sure Jell© instructions. Not really worried too much about the chance of bad jam but when you go through the work of gathering or buying fruit and doing the canning, really hate the chance of not getting a good seal or having the jam go bad.

No. As long as the lids sealed they don't need to be refrigerated. I do now give my jams a water bath process after they are in the jars. Here is what Kraft says to do; "Ladle immediately into prepared jars, filling to within 1/4 inch of tops. Wipe jar rims and threads. Cover with two-piece lids. Screw bands tightly. Place jars on elevated rack in canner. Lower rack into canner. (Water must cover jars by 1 to 2 inches. Add boiling water, if needed.) Cover; bring water to gentle boil. Process 10 min. Remove jars and place upright on a towel to cool completely. After jars cool, check seals by pressing middle of lids with finger. (If lids spring back, lids are not sealed and refrigeration is necessary.)" One point I'd like to make here though is not to take them out of the boiling water immediately. Turn off the burner and let them sit in the water for 5 minutes, this allows the pressure in the jars to stabilize. Also the water in the canner should already be hot before putting the jars of jam in.

Canning ground cherries??? I found jam and such recipes but NOT ONE recipe for canning plain ground cherries. I did it anyway. Used 1/2 C honey to 2 C water for the syrup and steam canned pints for 15 min. Does anyone have experience with canning ground cherries? NOT JAM

I haven't seen any canning instructions for them either. But if what you did with them turned out OK, then I guess you figured something out. Here is a link for "Gooseberries" . They are kind of similar and I don't see why the process would be much different. Thanks for watching and for the comment.
