How to can ground cherry jam AKA husk cherries from our canning recipe (below). Husk or Ground cherries are related to the tomatillo or hot house tomato. They do not, however, taste like a tomato. Fresh, they have a pineapple or citrus taste. Cooked, they take on more of the taste of a tart Granny Smith apple. The recipe for this jam / jelly is below. The video will also have links to other recipes of ours.
Ground Cherry Jam
AKA Husk Cherries
2 lbs Ground / Husk Cherries
1/2 cup Lemon Juice
6 cups Sugar
1 box Fruit Pectin
1/4 tsp Real Butter
To Make As Shown:
2 Additional Cups Sugar
1 Tablespoon Cinnamon
Prepare ground / husk cherries by grinding them in a food processor. Measure 3 3/4 cups of cherries into a large saucepan. Add lemon juice, pectin, and butter. Bring to a full rolling boil over high heat, stirring constantly. Add sugar all at once. Return to a full rolling boil over high heat (again, stirring constantly) and hold at a rolling boil for 4 minutes. Place into jars. Process in a water bath canner for 10 min. Turn off heat and remove lid. Wait 5 min. Remove jars to a towel covered surface. Yield (as shown) was eight 1/2 pints and one 1/4 pint.

We just got done canning our garden ground cherry jelly but put a box of strawberry jellO in with the sugar for the strawberry taste. Yum!

I made some of this yesterday with the extra sugar and cinnamon added and omg it's sooooo good. It reminds me of an apple pie flavor with some pineapple. My whole family loves it! I will definitely be making more with the ground cherries I have left. Thank you so much for this awesome recipe! I highly reccomend it, so yummy!

i remember when we where kids we used to pick choke cherries off the tree and my aunt would make jam into them but used to put wax on top they dont seem to use wax anymore lol i know im showing my age lol hugssssssssss from Ontario Canada

LOL... I am well old enough to remember chewing the jam flavored wax on the top of my grandmother's jam... ahahaha But I've not tried choke cherries... These are pretty tart, but I know a choke cherry can be quite bitter... I imagine it took a great deal of sugar to make them palatable...

They just have a very small seed like a strawberry, but a lot of them... Does not interfere with the enjoyment of the jam though...

Gooseberries here in the U.S. are different than the ground cherries, though they look the same.

Yes... We actually have them growing all along our creek, but I hate crawling through the briers to get to them... We actually found seed for them and planted them in the raised beds... We thought the watermelon overran them, but they were the winners in the end... LOL

Aren't they gooseberries ? Close relatives of the tomatillo. We called then goosegogs and they do make you pucker up so the jam will be wonderful and I wish I had them growing as weeds in my yard 👍

A true gooseberry grows on a bush rather than a plant and is a currant rather than related to a tomatillo... They do look similar at an immature state (green) but a gooseberry will eventually mature to an orange to red fruit... I can understand the similarity... Completely different though...

I believe that is their true name... We have always know them as husk cherries or ground cherries.... But this is good information... Thank you for sharing !

Yes... Low sugar pectin and honey are great options for some... These (since you leave the skin on) had a lot of pectin naturally... Its hard to explain, but if you've canned long enough you can tell by how it thickens and gels in the cooking process...

You should take the green ones out, or let them ripen more to a yellow color.. There poisonous because of the Solanine

I will look more into that, but what you are seeing there are two different types (notice all the greens are equally green, and all the yellows equally yellow)... They are both ripe... But I will look more into your advice, as we are growing only the yellow pineapple variety this year....
