that first pair really should of replaced the mid sole, does it really save that much time using a really low stitch count and leaving the nails in by just grinding them doesn't do much for the image of the profession

One should buy shoes from shoe makers, not fashion houses. Regardless, the repair work performed by the craftsman was excellent.
