今天想來分享我製作零失敗可麗露的烘焙心得,從食材的選擇推薦與風爐 vs. 一般烤爐差異解析,到不用貴鬆鬆的銅模也能烘焙出外酥內軟的完美可麗露烘焙模具分享,希望你也能跟我一起做出最好吃的天使之鈴可麗露
材料/ Ingredients
❥每份材料可製作12各可麗露
❥模具:高5cm頂寬6.6cm
1.牛奶 515g
2.香草莢1各或香草精2g
3.無鹽奶油26g
4.糖粉245g
5.甜點師蛋糕粉130g
6.蛋黃30g
7.全蛋1各
8.萊姆酒50g
Mold: height 5cm, top width 6.6cm
Can make 12 pieces
1.Milk 515g
2. 1 vanilla pod or 2g vanilla extract
3. 26g unsalted butter
4. 245g powdered sugar
5. Pastry chef Cake flour 130g
6. Egg yolk 30g
7. 1 whole egg each
8. Lime wine 50g

因為不知道你的模具大小,以下給你參考: 若使用較小的模具烘烤Canelé時,需要對烘烤時間和溫度做一些調整,較小的模具意味著Canelé的烘烤速度可能會更快,因此,為了避免過度烘焙或外皮燒焦而內部未熟,你可能需要降低烘烤時間。 調整建議 溫度設定: 1.保持原始溫度設定不變(220度烤15分鐘,再改180度烤)是可行的,因為溫度主要影響Canelé的上色和外皮的形成。 2.烘烤時間: 由於模具尺寸較小,建議縮短每階段的烘烤時間。具體來說,你可以嘗試在220度烤10-12分鐘,然後在180度烤40-45分鐘。這樣的調整可以防止Canelé外過於焦黑而內部未完全熟透。 3.觀察和測試: 在烘烤過程中觀察Canelé的顏色變化,特別是在轉換到較低溫度之後。使用牙籤或蛋糕測試針插入Canelé中心來檢查是否熟透。 4.因為烤箱性能、模具材質和實際尺寸等因素的不同,建議首次試做時仔細觀察烘焙過程,並根據結果調整。如果發現Canelé外皮顏色變化太快,可能需要在烘烤中後期適當降低溫度或遮蓋錫箔紙以避免過度上色。
