INGREDIENTS:
For the Hainanese Chicken:
1 whole chicken
4 cups water
2 stalks sliced onion leeks
3 tablespoons sliced ginger
4 cloves crushed garlic
1 tablespoon whole peppercorns
1 tablespoon salt
Ice water, for ice bath
1 tablespoon sesame oil, for chicken
For the Ginger Oil Sauce:
5 tablespoons grated ginger
1/4 cup canola oil
1 tablespoon minced garlic
1 tablespoon chopped spring onions
2 tablespoons light soy sauce
1 tablespoon sesame oil
For the Plating:
Hainanese Chicken Rice
Sliced cucumber
Sesame seeds
Sesame oil
Fresh cilantro
Chili paste
Hoisin sauce
Ginger oil sauce
