First of all thanks for sharing this recipe. I was been brought up in Gujarat since childhood, so I basically call myself a gujrati. But now living in Delhi for past 25 years, I'm missing the Gujarati Khaman!now I will try this recipe. Can you share the recipe for green chutney also? Dhokla was perfect but oil and water was too much.. Oil and water can be reduced to 50%, ie 2 tbsp oil and 1/2 cup water.. So better add water at time of tadka.. But that tadka mixture can be added in 2 installments with 10min gap. This will help the dhokla to get equally moist.
