It’s wild to have watched so many Chef John videos and never have seen one without the cayenne. It’s gotta be an oldie, right? I just had my mum send split peas across the globe for this. My Irish grandma was the only person I knew to cook it. I’ve never had it outside of our family. It’s something I’ve always wanted to do myself. I’m adding cayenne.

I have made this recipe at least a dozen time...deliciousness!!! Sometimes I alter it by cooking chopped bacon, draining excess fat and follow with the veg and rest of ingredients. I also add a little milk or cream in your individual bowl as you serve...heavenly...cheers!!!

I can't wait to try this! Just a friendly heads up: At 1:29, he says the one pound bag is about 3 cups. Actually a 16 oz. bag of Goya split peas is 2 cups. Not criticizing at all! I love Chef John and he has the best recipes. And it may not matter about the amount of peas anyway, but if you're stickler for detail, like me, get the 16 oz. bag, and that is 2 cups. Thumbs up! I'm trying this recipe today. :-) UPDATE: 1/2/20: I tried this last night and it was absolutely delicious!!!

City ham is a term used in some parts of the United States for any lightly cured and/or smoked ham which must be refrigerated to preserve it. It is generally "wet cured", that is injected with or soaked in a brine solution containing high concentrations of salts (including sodium chloride, sodium nitrate, and sodium nitrite). This is distinguished from country hams which are dry cured by being packed in crystalline curing salts and stored room temperature. In parts of the U.S. where country ham is not consumed, city hams are often the only available hams and are just called ham.

A ten year old classic? Every time I cook a ham for Easter or Christmas, I always save the meaty bone for split pea soup. I like to add carrots for sweetness and a healthy dose of white pepper for warmth.

Hi chef John my mum was Polish and some recipes are just ... heavenly and tx for your brilliant sense of humour definitely my go to channel when I forget stuff. I am ... sort of vegan but over the years adding a bit of meat like a ham hock or happy eggs from happy chickens no sin at all. So nostalgia and my sense of ethics are quite happy now together. This version is great; actually got something very like from my best friend who lived in Quebec City; it was a weekend event beginning with homemade stock and his homemade bread. Wonderful memories, tx as always!

It’s hard to find, but I would recommend using ham stock instead of chicken stock. It brings out the ham flavor. Also, I use carrots. I’ve never had a split pea soup without carrots.

you dont find ham stock you buy a smoked ham hock and mke it. ham hock is better than country ham.. its got bone for the stock and way more flavor in the meat. i make the stock on day 1.. cool overnight in the fridge so i can remove the caked fat off the surface the next day when i make the soup.

My mom makes great pea soup and also adds small cuts of potato during the simmering and cross sections of orange and dark carrots to add sweetness. You could simmer longer so the potato starch thickens the soup and they become "mashed potato" consistency. Next time I'll try seperately sauted then simmered onion slices to top off like French onion soup.

You can get a ham bone from honey-baked ham or heavenly ham if you have one in your area.

I just read this and as I write I have vegetarian split pea soup on the stove simmering. No city ham, though. I used a ham flavored vegetarian powder which I bought precisely for making this soup. I don't eat red meat but I like the smokiness. I thought of adding crisp turkey bacon crumbled on top.

Haven't tasted city ham? Well yankee, lol, you just used city ham in this recipe. I can tell by the color and how easy you cut it. Country ham is much darker and dryer. I use smoked ham hocks in my recipe. But now I think I'll try country ham. I love your channel and watch it with salivating mouth a couple of times a week. Keep up the good work!

Country ham is salt cured. Therefore City ham must be sugar cured. Both are delicious in almost any soup. If smoked, even better. Thanks for the recipe Chef John.

I was taught to wash the peas and soak them overnight, u skipped that, but it didn’t seem to hurt the soup any,. I prefer the yellow split peas, just because my Mom did, they’re good. btw, try garlic croutons sometime if u like crackers in soup, not sure how they work in creamier soups, I only use them in moe watery soup broths like. Chicken Noodle even tho I’m a lousy cook, but you’re not! Thanks CJ !

I've made pea soup all my life (from the recipe on the bag), but decided to use your recipe after having other recent FoodWishes successes. Well, it was ah-mazing! I threw in the bone from our Honeybaked Christmas ham, too, and it really makes for a filling meal. Thank you! Happy New Year! Eat at a Waffle House and you can order ether City Ham or Country Ham. The southern restaurant chain advertises regular sliced ham as "city ham", and the salt cured country ham as "Country Ham" you are currently cooking with what we would call City Ham. Country ham would add texture, salt, and a notable flavor to split pea soup. an avid fan from the southern part of Georgia, USA.

It's raining, check. Cold, check. Ham hocks have disappeared and I cannot get mine from my brother in Toronto, rats, so not checked. I always do mine with carrots, bay leaf and of course cayenne. Tom One, Chef John 2020.

Where's the carrots...My Portuguese Grandmother put carrots in every soup she ever made...Both grand parents lived into their 90's and credit for their long lives to their love of soups!, and Bacalao, Chorizo, spaghetti sauce, Bulla bread (bread made with bacon, chorizo and ham...YUM YUM!) Great food makes for a great life!
