What exactly do you mean? The, some would argue over-, use of slowmotion is definitely not a "documentary-style feature" but dominates the whole piece. EDIT: Typo

I am honestly in awe of the Japanese people and their attention to detail and the near spiritual emotion level they put into the perfection of their craft, it is simply incredible. I will visit Nihon soon.

there are a few type of japanese noodles that are called soba, not all contain buckwheat. it can be a bit confusing, but usually you can tell visually if its' not purple/pale brown at all and yellow instead.

Wow! What a true master!! She makes every single thing from scratch every step of the process. Not only the noodles, but down to the oil and the other spices she mentioned while serving the dishes. I'm blown away.

Lol that's exactly what I thought! They probably got the character inspiration from her? Except that this chef knows everyday the temperature, humidity and settings for making soba are different unlike Nene in Shokugeki no Soma. Edit: I just realized her family name is Soma...wow

the music and the editing.... the way you guys described the formation of those dishes felt like the telling of how a dish is cooked in the manga shokugeki no souma. You've made us able to imagine the taste of the dish as it is built and translated the hard work of these craftsmen into the bliss that the food brings, the dishes that would not taste like they do without the work that these people and the culture behind it had put in. It's like the manga except in video form with HD cinematography and exceptional film editing. This is the third video of Eater's I'm on. I have enjoyed them all very much. I appreciate deeply that these videos have made the people behind the foods a central part of the narrative, as is important especially to the Japanese people, and that the essence of the story surrounding the food have all been taken into account and woven into the video. This is what HD era documentary making looks like. If someone did this at a bigger scale, like a nat geo film, itd be crazy.

seriously this is such a beaitiful episode, i personally loveeeee eating soba, but it has been so hard to find in london or hong kong, i have had really amazing handmade soba in japan, i can eat soba everyday! admire this chef looks so skillful and peaceful throughout the soba making process, would like to visit the restaurant one day!

I'm just a homecook but I have tried making noodles from scratch, it was delicious but the process of kneading dry flakey dough until smooth with hand is PAIN. It's so exhausting and seems like it'll never end, yet she make it look so simple. The smoothness and the perfect shape is also very satisfying. Wow, respect to this ma'am

Brilliant video. It does honour so much her skills. Beautiful in every way. Wanted to say also that I think she's kind of the only one chef I know that managed to pull what an european or american would call a meal, I mean, a dish combining 3-4 elements with a sauce and/or some veggies. Japanese cuisine is always really spare when it comes to creating dishes, apart maybe from ramen.

I know she learned this from her grandmother but I'm curious if the saying for soba is true: "3 days to master the knife, 3 months to master the rolling pin, 3 years to master the mixing bowl." Also, she grinds her own buckwheat. I wonder how she classifies it since making buckwheat flour has classifications based on how much of the seed you grind. I'm also curious if she serves the sobayu at any point in time. Anyway, thanks for the cool video, Eater.

The soba powder she uses is very likely the standard flour to make the brown soba. If she used the finer sarashina one, she would have made a pure white soba. However, as far as I know, you can only get the sarashina flour imported from Japan. The soba restaurant in L.A called Otafuku gets their white soba flour straight from Japan and is one of the very few restaurant that offers the white soba.

I make my own noodles too and know how time consuming it is but it is worth it. I would totally support his kind of restaurant that is dedicated to making fresh noodles :) .
