I'm pretty sure they'd do something after that so as to avoid being sued, shut down by health inspections or lose business.

I've seen that in real life too personally: when I was a regular at a local souvlaki restaurant that made great souvlaki, great food quality (he even made his own sauce), the owner had great attitude but unfortunately he sucked at running at business. Which is why it barely lasted for 1-2 years. Still a shame. Moral lesson? Even if you're the best cooker in the world, it means nothing if you're not good at business as well or at least hiring someone else for running the business.

Happened to an AppleBees. The way seating was handled, I was surprised the location lasted so long.
