I wouldn't say Gordon's a mean or rude person, he only seemed to be in his mean persona when dealing with professional chefs who messes up big time or it's his TV persona for drama purposes. Usually he's like a chill and down to earth guy. Blunt, yes, but also sincere.

asians usually use raw food and need to process it, that will harsh and trash, burn wood fire also make a lot of smoke, that's why outside kitchen are needed

Rendang paste is the most delicious paste usually cooked with beef but we also like to put the rendang paste to cook nasi goreng since it's so tasty. There's no need to put MSG when there's rendang paste since it's already have a strong flavors. Rendang is signature food of West Sumatra; rendang in Malaysia have more curry taste but rendang in Indonesia doesn't and is more spicy.

Galangal is a South East Asian ingredient, similar to ginger. Used in some chilli and curry recipes. Wok Hei is the heat/smoke rising from the hot wok and gives the rice a slightly charred taste. And you guys are funny too haha.
