Wok hay- is a Cantonese phrase used to describe a particular essence and aroma that is created in a dish when authentic stir-frying is performed. “Hay” means “energy” or “breath”; therefore, “wok hay” means “the energy or breath of a wok”. By properly and skillfully cooking food in a well-seasoned wok over extremely high heat, a stir-fry will obtain concentrated flavors that have a particular essence and aroma. @@shahidrahmat6547 no need. Cooking with wok has a flavour itself. Nth to do with msg. Msg enhances the taste bud, wok hay gives a different texture and smell to the food. Wok Hay is similar to how people grill or barbeque, giving different texture and smell to the food.

Silken tofu is not suitable at all on fried rice, at least fried the tofu first and make it tiny cub before adding to fried rice, not tear it apart like that. Totally disgusting

Hi again Vanessa and Fernando. Just additional fact. Most reason why we fry rice is to save excess cooked rice from dinner. So we eat fried rice for breakfast. First step: We cook the rice first put aside Second: fry the egg and put aside, if you would like to add ingredients like bacon, slice the bacon into smaller and fry it. Third: Fry the the garlic and onion til a little brown it depends to your taste, if you have to add green peas and slice carrots. Last put the cooked rice and fried egg plus the seasoning. If you would like to put soy sauce a little then it depends to your taste. The last onion grass.

We call it kawali, yup there is a wok hay. Reason there is a difference on making garlic rice in kawali than pans. We use wok or kawali to fry food (like lechon kawali) and saute food.

You don’t usually put tofu (especially silken tofu) into fried rice because silken tofu contains a lot of water. And the point of fried rice is that it has to be dry to fry properly. Adding silken tofu will make the rice much wetter which will defeat the purpose of frying rice...

Even in philippines. We don't put tofu in fried rice. we cook it seperately mostly with pork (Tokwa't baboy). And we dont wet the rice. We do oyster sauce or soy sauce tho.

he put water to rice to avoid the rice getting burnt, thats because olive oil already burn out in high heat. Fried rice used high heat to cook, but the chef use olive oil which only suited for low heat smh. Idk the idea of using olive oil in chef mind, so many vegetable oil like corn oil, peanut oil, sesame oil etc

I am a cook myself and he said all right points. Except msg thing some like salt some rock salt some msg it's a preference thing. You use raw water as retry or readjustment for mess ups. no cooking asks for water in middle of cooking.

Wok hay is real, foods (with the same ingredients) that was cooked with wok will be much more delicious (because of the wok hay) than foods cooked with saucepan.

Tofu should not be in fried rice, as tofu has a lot of water in them and you don't want your fried rice to be wet. Especially, the type of silky tofu Jamie used has even more water. If you want to put in tofu, you might be able to use fried tofu as they contain less water. Also, I think the reason he added water to the fried rice is because he put in chili jam. The sugar in the jam burns very quickly so he needs to add water to stop burning.

Yes tofu is a good and nice food.. But wht would test in a fried rice whan the tofu alread tear apart into a small pieces and we all knw a wet tofu is to soft..
