Pauk is a fresh roasted or steamed millet under high heat while it is not separated from plant. The process essentially cooks seeds from inside, makes them sweeter and soft. You haven't tasted actual pauk as it's a recipe actually in which these seeds are mixed with sugar or jaggery which tasted like smokey, soft beans. Pakuda is not actual pauk, but a derivative of raw pauk. The undhiyu displayed in this video is one of the variant, it still lacks alot of veggies such as peas ( matar) , white beans ( val ), eggplant 🍆, tomato and spring onions + spring garlic ( as it's a winter dish and you can get them fresh with leaves intact ), cauliflower etc. Undhiyu is a mixture of veggies essentially. That's why it's name is undhiyu meaning once you eat it it's so heavy on stomach that triggers the comment "Undha vadi gaya" i.e., "We are at full capacity" or literal meaning of "turning back form something". There's a lot of difference between surastra food and eastern gujarat food. I urge you to visit saurastra region in two phases. One part goto Junagadh, Gir, , Amreli, Bhavnagar side which is sorath region, they have their own kind of food and taste preferences and then visit saurastra region i.e. Rajkot, Jmanagar, Porbandar etc which will give you another set of traditional gujarati taste. Even in one state there are 7 kind of gujarati food variants that are nothing alike and taste very differently. More things to explore!!
