I reconstitute the freeze dried shredded cheese by laying out on a mat of damp paper towels. Cover with another damp mat and let sit for a few minutes. If not quite back then spritz with water from a spray bottle and let set for a few more minutes. It comes back perfect!

I saw a thrive life vid on refreshing shredded cheese.Tried it ,worked well.Put in zipploc bag,add water,gently kneed,pour water out,out in fridge over night.Tastes fresh

you can turn that cheese into cheese powder. I really love using cheese powder when I make my cheesy grits because it's not stringy, and it's also a great way to add big punches of cheese flavor to macaroni and cheese

Cheese rehydrates easily for me. Problem is shredding and grating the cheese, it seems to make cheese too thin and makes it resist rehydration. Freeze dry in small 1/2 inch cubes and once dry crumble softly into curds not crush or powder just crumble them. Then add water 1 teaspoon or tablespoon at a time (depending on how much you rehydrating) over course of maybe 10 minutes waiting a minute or 2 and stirring gently between additions. Works for me every time has perfect texture no sogginess no dissolving. Rule of thumb most cheddar or jack style cheese is 35% or about a third water so you need about 1/2 by weight of cheese in water i.e. 50g cheese dry add 25g water will yield 75 rehydrated cheese.

I love doing yogurt for my grandlittles. Put flavored greek yogurts in pastry bag with star tip. squeeze dollops of decorative stars, fd and package up. Perfect size for little hands, and they go nuts for the flavors! I love the idea of cottage cheese. Thanks for such wonderful videos, you are so inspiring!

I find using a spray bottle of water can really help control the reconstituting of many fruits and vegetables, so they don’t go totally mushy - like spaghetti squash. Also try spritzing avocado with lemon water (more lemon than water)

I like to add chips to my sandwiches. I bet the freeze dried cheese slices would give the crunch of the chips with the flavor of the cheese... may not need to rehydrate it at all.

I have done whole milk and it rehydrates perfectly. I grind it to powder before sealing in Mylar with an O2 absorber. Each tray holds 1 quart. Best to put the tray in the machine then pour the milk in and let it go through the freeze cycle. My wife loves the cottage cheese - even dry. I haven't done sliced cheese yet. I suppose if powered you could rehydrate it to a paste and spread it like peanut butter. Maybe - I'll have to try that and see if that works out. I know that works well for Braunschweiger and it's so good. Do the milk - it will be just fine I promise.

I'm wondering about adding milk to re hydrate the cottage cheese. Maybe even milk that is re hydrated. I would think the cottage cheese would be really creamy. Same with any dairy.

I watched a video from a producer of freeze dried cheese and they say to put in ziplock bag with just a little bit of water and then allow 24hours in the frig for it to reconstitute the best. They did shredded cheese.

You can reconstitute shredded cheese by using about 2 tablespoons of water per cup of dried cheese, let set about half an hour. If still too dry use a spray bottle, spritz & toss to get at everything, let set. Continue to spritz & toss until it has the right feel. I have done it many times.

Thrive Life freeze dried foods sells shredded cheese-to reconstitute, they say put in a Tupperware with a couple spoonfuls of water ( cold) shake the. Store in fridge.

Wow, great video! I am watching all you post, so helpful! Can’t wait to get ours. We are on dr.bergs version of Keto (3.5 yrs now) and have our health back and lost weight. We are hunting for freeze drying keto friendly stuff, like recipes from Papa g’s on yt. He has a lot of casseroles. We understand fat is not easy, but have watched all your cheese and dairy and am encouraged we can do this. Bacon grease, pure butter, heavy cream, and high fat in hamburger in recipes would be my question. Looking forward to doing keto meal packs_ like have ingredients separate & assemble when rehydrate. Thank you for all you teach- really helps! Saw this other channel that did detailed cheese and rehydrate info: Evan Rowell Critical thinking. Has two part long detailed cheese, dairy info. I have half size trays I freeze my food in, soup, sauces, etc. I pre freeze them and transfere them to the freeze righ trays in doing so i take them out of the deep freeze, flip them upside down on the trays and use a hair dryer to heat the pan and it releases and drops to the tray ready to go in the freeze dryer still frozen. Works great for anythimh!

There are several people I follow on KZfaq who use freeze-dried shredded cheese. They always seem to put it in a casserole-type situation or sprinkle on a covered sandwich that gets heated up. When everything cooks up, it looks perfect and they say it tastes wonderful.

Try placing one water of bowl in oven and place these products in one dry plate . Set the temp. As low as possible. You need to done lots of trial in oven on different time and temp. Combination.

A Harvest Right freeze dryer will pay for itself in less than a year, based on 3 batches per week and compared to the retail prices of commercially produced FD foods. One key fact - the large dryer will process more food than the small and medium dryer.....combined. Making the large the best value in the long run in my opinion. I've been using my large dryer and oil less pump since Dec 2018 and have put up a lot of foods of all types. My dryer has paid for itself several times over.

I heard cube cheese is best eaten dryed. Your other cheese should work well if melting over a burger etc. Someone else used dry cheese on a philly steak and it worked out great.

I know its not recommended by harvest right, but have you tried butter? There are companies that make it. I read that if you mix it with milk, it will work and just have a milky flavor once reconstituted. But no indication on how or how much.

Watch tiny house, tiny prepper video on re-hydrating cheese..put in a container with just a little water in it- they give you the ratio on their video, sorry can't remember which one it was but they cook with Thrive Life...then.shake it & put in fridge for awhile and it melts just like fresh cheese. I bought some of the Thrive Life FD shredded cheese after seeing that video. Don't think it would work though for a back packing trip unless you use some real cold water?? Thanks for the video.

Spray the cheese with a spray bottle the same way that I I mentioned with the avocados. Just don't use lemon in the water. Put them on top of a damp paper towel. 😀

Im curious to see if you had a small bath of water and used a pressure cooker with the cheese sitting over a grate above the water. not so much water that it should melt much but enough that under pressure it would force the moisture into the cheese. I just bought one of these bad boys but I gotta wait 10 weeks before shipping :.o

Yes. A few people have mentioned that with the shredded they just throw it in recipes and it turns out great.

+I purchase one after watching your channel in June and got in July, it worked for 6 times than it quit, not having adequate vacuum and screen not working, had the screen replaced 2 times still no vacuum and then they sent a new shell and still no vacuum and my oil free vacuum pump did not work the hole 4 times (new shell of machine) I tried to freeze dry my mushrooms. I have waste so much food and time talking to Harvest Right, I still do not have a machine that work, and I spend $5032 and thousands of dollars to get accessories to use in for the machine and pkg. I would like some help.

What did you mean by letting the pump cool off while you were using it. My pump gets very hot to the point I put a BIG fan next to it , the over head fan on and a little fan by the window AND my house air conditioner on.

Cheese is very dense so it won't soak up the water like you think. It might be ok if you were to put it in a pressurized canister with a little bit of water. A reverse operation.

Cheese does fine, I just didn't give it enough time in this video. Try overnight and get creative when rehydrating. I recently rehydrated in beer!

Wax the cheese instead. If it's a hard cheese it can be waxed for shelf stable storage.

I'm really curious as to how the cheese powder turned out? Yours looks really coarse here, which is fine (no punn intended!) but I'm wondering if I can make a good substitute for cheese powder that I buy for making popcord? It would need to be very fine and powdery so it will coat well. Even if it's coarse, I could see throwing a spoon or two of this in w/ a serving of fd'ed eggs to make a cheesey omelette. :)

Did you use customize to take off 1/2 hour? So everything I do take about 40 hours. Is this normal? If it needs less time will it adjust or do I have to adjust it. Do you make a chart that gives us idea how much different items take! Such as eggs, meat carrots etc?

What about just taking those big old cheese slices and put in them in between some tortillas and making a quesadilla out of it? Have you tried anything like that?

I was wondering if making a deli roll up with cottage cheese and jalapeño cream cheese would work together as rolls. The cottage cheese has a better texture supposedly with freeze drying mixed with that sort of flavor I was curious what you think?

Some of my different freeze dried products. While great at time of removing from the machine are light and crunchy. I put the product into vacuum packed mason jars: some with and some without O2 absorbers. Now after 6 months on the shelf and looking good. I opened and tried both the bananas and carrots. They were not crisp and actually were a bit leathery. Have you heard of this and a possible solution? I haven't tried descant, storing in a darkened room or milar bags.

If they are a different texture, they were not fully freeze dried. Foods remain dry and crunchy for years and years.

If you watch more recent videos, i have the new software that comes in the newest machines. The software is much more intelligent and will do all of the guess work for you.

Ok, so how are the probiotics in these products effected by being freeze dried? Are they still there? They are bacteria, and it seems from your meat videos that bacteria still live on the raw meat, it’s not like some witchcraft way to not cook your meat and have it safe right? Or is it safe to touch meat while freeze dried but as soon as you reconstitute the bacteria are multiplying? Would love some insight about this! Also how long would you feel comfortable storing freeze dried dairy products? It doesn’t seem super black and white so how do you know when it isn’t safe to use?

It makes it easier. It has to be frozen regardless. Either the machine will do it in the beginning or you can do it before it goes in the machine

I know this video was made 4 years ago, but I would soak the cheese in milk, rather than water. It won't ruin the taste.

If done properly, the taste will not change at all. Freeze drying is only removing water, a small amount of flavor

Powdered cheese is EXPENSIVE. I would want to make lots, whenever it was on sale. Also, what would happen if you put one of those cheese chunks in olive oil, like Italians do? Would it soak up the oil, or stay dry? Because if it took the oil, then yum..

Try putting the cheese in wet paper towels and let them rehydrate slowly

I have tried different high fat cream and things and they will not store long term with such a high amount. I don't have first hand experience with real (out of the cow butter), but I would imagine the same results. You could search on the FB group and I am sure there are plenty who have

freeze dryer is HARVESTRIGHT medium size I use the freeze dryer to vacuum seal as well
