Saffron Crocus flower in the fall and are the source of Saffron Spice. They are easy to grow as a wild flower. And easy to harvest. But it's a time-consuming process to pick each Saffron thread out of every Saffron flower! It's so worthwhile, though, to grow them for yourself, especially since Saffron Spice is so expensive to buy.

Saffron Crocus Are Interesting Plants to Grow!
In some ways, I think the long, grassy leaves that stay green all winter long, are the coolest part of the Saffron plant. But people are mostly just interested in the flower of the Saffron Crocus (Crocus sativus) - and not even the whole flower. Just the bright red threads that make Saffron Spice.
I'm not a great gardener of Saffron Crocus, not by a long shot. But I like that they are almost a wildflower. They can take care of themselves.
And their season of flowering is the opposite of most crocus. Saffron crocus flower in the autumn, instead of the spring. Here in western Oregon, the leaves and flowers start coming up in late October.

Saffron Harvest - Picking the Flowers
Some folks say to harvest the Saffron threads before the flowers open up. Other folks say to harvest them a few hours after the flowers open. Honestly, between the two, I can't tell any difference in the quality of the Saffron Spice. I just pick flowers as I see them.
When the weather is wet, the flowers can get pretty bedraggled. But the threads inside the flower are usually OK. Regardless of the weather, I go out every day and pick the Saffron flowers that are ready - over a two to three-week period.
Once the Saffron flowers are done flowering, I cover the whole area with a layer of wood chips. And they are good to go for the rest of the year.
I have them planted in a spot that gets the hot afternoon sun. And they don't even want any water, through the whole dry summer here in western Oregon. That's because they go dormant and lose their leaves and disappear during the summer.

Processing Saffron Threads After Harvest
Once I've picked the flowers, I need to get the Saffron threads out and dried. It's an easy process. I just pull the Saffron threads out, put them on a plate, and let them dry out of the direct sunlight.
Every year, the number of flowers seems to triple. And as my crop of Saffron threads has gotten larger and larger, I realize -- growing and harvesting Saffron spice is not a practical retirement plan, even though Saffron threads sell for a good price!
I'm not going to process hundreds of thousands of these Saffron threads over 2 to 3 weeks. I'm happy doing just a few at a time, building up a stock of Saffron threads that will last me for a few months.
The flowers have such a pleasant scent that it's a shame to toss them out. So I keep them in a vase for a few days. They fill a whole room with a wonderful aroma. It reminds me of my grandmother.
When the Saffron threads have dried out for a few days, I put them in a jar, and store them in my pantry, where it is really dark. So far, my favorites have been Saffron-Braised Celery with wild flowers and wild pin cherries, and Saffron Fingerling Potatoes, with wild chanterelle mushrooms and wild garlic potatoes.

The flowers with the Saffron-Braised Celery are fresh Redbud (Cercis canadensis), Wild Field Mustard (Brassica rapa), and Yellow Deadnettle (Lamiastrum galeobdolon), pickled Elephant Garlic flowers (Allium ampeloprasum). And the cherries are wild pin cherries (Prunus avium).
Saffron Fingerling Potatoes: butter and saffron, served over Cherry Tomatoes. The other dishes on the plate use Wild Garlic (Allium vinale) leaves and top-set bulbs with Red Pontiac Potatoes. And Wild Pacific Golden Chanterelle mushrooms (Cantharellus formosus).

The traditional way saffron is processed for cooking in Iran is by grinding the threads into a fine powder (or chopping endlessly with a sharp knife, then crushing) and filling about a teaspoon of ground saffron into an espresso sized cup, then pouring boiled water over it and stirring until you have a dark red golden liquid. The liquid is then added to meat or vegetables, stews, rice, etc

No, shouldn't pour boiling water over saffron. That will ruin some key flavors. No need to grind either. Just soak your threads in room temp water for abt an hour. Then add that water to your recipe.

I like to pinch a tiny bit of dried saffron and add to white rice in my rice cooker, along with a dab of butter and 1/2 tsp salt. I’ve never tried to grow it myself, but want to try!

My name is Saffron my parents got my name 73 years ago from the Holy Bible song of Salomon Chapter 4 verse 14 a long with Cinnamon and many health foods he fed his people from his garden. He had Chef's that cooked up many Delicious meals with his spices. Jesus created all good things 🙏 He planted fruit Trees and health veggies too feed his people. Saffron is also a color as all spices! Bright yellow and orange! It's mixed in with our fall and autumn colors. I love to see the fall and autumn colors in the leaves when they turn. Have a good Day!

I usually make paella out of saffron and its' scent that fills my entire kitchen is something that is beyond amazing. Please please try! The recipe is simple and amazingly aromatic!!!

Saffron mixed in butter with salt and pepper can be rubbed on a baker chicken. If you separate the skin from the breast and rub the mixture under the skin as well as on top of skin....you should get a rotisserie flavor once fully baked. Thank you for this video :)

Thank you for the great video, I think in two weeks it will be harvesting time for those saffron flowers. Good luck 🍀 we eat white rice infused with saffron. We also use it at the last steps of cooking meat or fish briyani. You can also make saffron perfume. Infuse some saffron threads in coconut or olive oil and keep it in a cool dark place for few weeks and then you have the best hair and body perfume . Salam

I do a Saffron Salmon dish that my insiders have raved about. Butter Turmeric Salt Pepper and Saffron. lightly sauteed. Served in a fatty spicy broth swamp of Collard Greens.

Glad you enjoyed my Saffron flowers. They are worth growing, just for the wonderful smell! I don't see them around much in gardens or parks. It would be nice to have more of them around! I hope you do spot the Saffron Crocus sometime!

Actually, you should be able to find these in any of the more expensive herbs shelves in the more famous supermarkets I have seen em i think in Billa or Lidl Or in herbs shops, but look for eco/green brands shelves. But its in 5-15 grams max and cost way more than any other brands of herbs.

Im growing my first saffron crocus this year! Ive grown all sorts of crocus, and when I found out the saffron crocus can grow in my area...what a "duh" moment! Idk if it will help anyone...but in my area squirrels are top notch theives so I cover my planted crocus beds with flat squares of hex wire or rabbit fence. I still cant save'em all, but at least they have to work for their dinner!

After removing the flower, can we eat the leaves - they look like wild onion. If they will grow back, usually they come back stronger and more abundantly. Its almost as if they are trying to feed you.

This was very informative, i planted 10 bulbs this fall and i got kinda scared when i saw the leaves already emerging! I planted them round a tree that i usually have to put a water bag around during the summer, so it seems it works out after all with both the flowers and the leaves!

That was interesting I wish I could do the same here in Toronto. I marinate chicken legs with saffron and aftera few hours I put it in frying pan and gently fry with some butter and onion and salt and then put the lid on and let it cook without any water added .

Have you ever used the threads fresh out of the garden in a dish? Does it have the same flavor and potency? Just curious if they can be used before drying them. I just planted some back in the fall, am looking forward to harvesting them when they flower this coming autumn.

Interesting they come up in the fall in Oregon. In Scotland they come up in February. Scottish crocuses are much smaller too.

I too am both haphazard and in (s)western Oregon, so I’m glad to have found your channel! This is my first year growing these cool plants. Do the flowers have to be picked? Can’t the stamens get harvested and left be or will that discourage the plant from making more flowers?

I have been growing saffron for many years but have not hand the luck that you seem to be having as far as the saffron multiplying each year. Perhaps it's because my soil is not quite right and that I haven't been fertilizing them. Do you have a plan you use for fertilizing the plants you have or if not how do you account to the proliferation of the plants? As far as storage of the stigmas I find that for long term storage that the freezer is the best place for maintaining the color of the saffron.

I don't know if they grow in the desert, with or without extra water, but I got bulbs, not seeds, from a local commercial landscape supplier years ago & they're still blooming! They bloom in the fall, as opposed to other crocuses that bloom first in Spring.

try flavoring rice or food with saffron....... it gives a beautiful orange color and a mild fragrance......it is used in making sweets and ice creams in India as well........ so try it with Pear Sorbet....... :-)

I'm wondering if you can make potpourri with the flowers. I planted this September 20 crocus sativus bulbs, I lost one to rot, may he rest is peace, and the rest are doing well and I see 7 tiny flowers. I plan to expand to raised beds next year and I am already planning ahead. I just subscribed and also clicked on the bell thingy and I would like to see more crocus sativus videos.

In India, we put saffron in hot milk and drink that. It is known to have skin whitening effect. However, overuse can be poisonous.

I think I'll skip harvesting saffron! If I ever find any pretty, sweet smelling fall crocus I might bring some in and put them in a vase to enjoy looking at for a few days!

I have seen saffron dust or threads in shops , its extremely expensive here in Bulgaria (and in Turkey aswell) . :/..Would love it if i can find some plants and multiply em. ( i wont mind cleaning thousands if i have some, love gathering herbs in general 😀) Edit: can they actually survive below -10C ? I dont think the climate im in can sustain em sadly (who ever visits Turkey, most shops will proly have em ,but be ready to haggle , its favourite thing of shopkeepers )

You have more patience than me! To get through that many flowers in such a limited time, I think I would go cross-eyed trying to get every little saffron thread, lol. After this season, I'll be digging my Saffron Crocus bulbs and spreading them around. I started with just 3 bulbs. They put off new corms, like any crocus, so if you get any starts yourself, you can eventually have thousands! :D Get ready to set aside all of October for processing your thousands of flowers! ; )

Haphazard Homestead Soil is toxic from the crumbling next house wall in the yard- but if they live in colder climate, grandfathers villa yard will do a great job, before it had apples, cherries, apricot and wallnut tree plus bees, now this.(sadly, damn butterfly infestetation killed all trees/bushes) Or clean the garage roof in the yard in the city, 15x15mx15m should be enough On top in pots

That's too bad about your yard, StalkerBg! I've seen people growing Saffron Crocus in pots and milk crates, too. So your rooftop idea seems like a good one!

Haphazard Homestead I stole it from another persons idea by growing potatoes in garbage bags 😀 Supposedly that way you can grow alot of harvest in extremely short space (WW1-2 thing).. would be kind of a cheat if saffron can be exploited the same way. Also we found ash from cheap sunflower seeds makes for plant booster (and seems to trigger lots of flowering)- usually thats our burner fuel, and we feed the yard with ash and make 25l yearly wine , good clean cycle

It sounds like you have a good system! It's worth a try with the Saffron Crocus, too. You've got me curious about the sunflower seed ash! I know that sunflowers can pull up a lot of nutrients and minerals from the soil. So I can understand how their ash would be helpful! And the giant sunflowers sure produce a lot of biomass! Ha! Yes, that's why saffron is the most expensive spice in the world, because just pulling those little threads by hand isn't easy. :)

I'll do more Saffron Crocus videos in the future, too -- so you'll get a reminder, lol. I know that the White Flower Farm in Connecticut has them regularly. Fedco Seeds in Maine is a great company and they have Saffron Crocus, too.

They would be a pretty little plant in a rock garden in a small yard. It's fun to see a crocus with the autumn leaves, too. The big trick with them is to keep them dry in the summer! I know folks grow them in pots for reason, in areas with wet summers. Good luck and let me know how it goes! :D

Hi Holly :-D I LOVE crocuses. I have them all over my yard here and there. They are the same color, but, I don't know if they are *saffron* crocuses or not. How would I tell the difference? I know it has to be a certain type, but, I don't know the botanical name. Do you? Just LOVE ALL of your videos!!! :-D

Many crocus have flowers with the same general shape and color. The Saffron Crocus is Crocus sativus. The other fall-flowering crocus is Crocus speciosa. There are other plants called Meadow Saffron (like Colchicum autumnale which is really toxic), but they are not for eating at all! The true Saffron crocus blooms only in the fall. And those floppy red threads are unique. They are the female flower parts, the stigmas. Other fall-blooming crocus (Crocus speciosa) have orange-yellow stigmas that look more like 3-part antlers. But the long, floppy red stigmas are unique to the true Saffron Crocus. Hope that helps! And I hope you can see a true Saffron Crocus soon. You will know it when you see it! :D

Thank you so very much, Holly!!! YES!!! This was exTREMEly helpful!!! I know now I have never seen a saffron crocus because all of mine bloom in the spring. I am definitely interested in growing my own. Saffron is WAY too expensive for my budget! I can remember as a child, a rich aunt of mine used to use saffron in her chicken soup. It gave it a WONDERFUL color & unique taste. When is the best time of year to plant, and how long before you can harvest?

The Saffron Crocus bulbs are dormant in the summer. They spring back to life in the fall. So anytime that they are dormant is good for planting them. If you see them in a plant catalog, they will typically ship them in August or September. I harvested 3 flowers my first year. The number of flowers has tripled every year. I'll have more videos on Saffron Crocus. But if you see some for sale at a store, even now, it's worth giving them a chance!
