Ingredients and preparation of (vegan) rhubarb pancakes:
Approx. 200 g rhubarb
330g flour
3 tbsp starch (approx. 40 g)
8 tbsp sugar (approx. 150 g)
1 pack of baking powder
½ tsp salt
1 pack of vanilla sugar
360 ml milk (for me this time almond milk)
6 tbsp oil
2-3 tbsp oil for frying
Serve with agave syrup, honey, syrup, jam, berries, etc. if desired.
To prepare it, we first cut the fresh, crunchy rhubarb into nice, thin pieces. To make the dough, we mixed flour, starch, sugar, baking powder, salt and vanilla sugar in a bowl and finally mixed it with milk and oil to form a nice, smooth dough.
We then added the rhubarb pieces and mixed well. We then fried the dough in a pan to make delicious, fluffy pancakes.
The result is simply a dream! The fruity, savory rhubarb blobs in perfect harmony with the airy, delicious pancakes. An irresistible interplay of flavors and textures that pampers the senses.
