It wasn't until I became an adult that I heard of semolina with milk and jam. Grandma always made us semolina with milk and burnt sugar tea. Ingredient:
• 500 ml of skim milk
• 50 g of fine gray
• 2 sachets of vanilla sugar
• 50 g of sugar
Milk semolina is very easy to make. All we have to keep in mind is that 10% semolina is added to the amount of milk. That is, 100 g of semolina is added to 1 l of milk. To 500 ml of milk, 50 g of semolina. Very easy to remember.
We boil the milk, over low heat - important, because the milk burns easily, and then we wait. When it almost boils, add the semolina slowly. Stir continuously until the semolina swells and thickens. For this amount it will only take a few minutes.
The semolina should be soft, like a pastry cream. Then we know it's ready.
At this point add the vanilla sugar. I always advise you to add sugar at the end. Whether you make rice with milk, angel hair pasta with milk, semolina with milk... sugar should always be added at the end. This way the cooking is faster, and in addition, you can add exactly how much sugar you want. I add 2 sachets of vanilla sugar (16 g) plus 2 more teaspoons of normal sugar. It is enough considering that we will add something sweet to the it later.
Pour the milk semolina into a deep plate. Of course, you can stop here, and serve semolina with jam if you prefer, but I hope you try my grandmother Nina's version as well.
Put a very clean pan on high heat, and pour about 50 g of sugar in. Even and thin layer. We wait for it to become liquid in several places, then we mix it for a uniform caramelization.
When it becomes a reddish brown color, immediately pour half a glass of water and let it boil for 2 minutes. So we practically make a caramelized sugar syrup, just a little browner. Don't ask me why my grandmother called it burnt sugar tea, because I don't know. But that's how she served us semolina with milk. In deep bowls, soaked in caramel syrup.
