For a sweet red wine here’s a recipe I came up with and love. 3 cans red grape juice concentrate 2 pounds sugar 1 cup strong black tea 3 table spoons lemon juice 1 teaspoon yeast nutrition 1 packet yeast of Choice (I used one that can ferment out to 18%) Mix everything together then add enough water to get to a one gallon mark, except the yeast. Then pitch yeast and let it go for a while. I didn’t take a reading at the beginning but it taste amazing.

Let it ferment out, kill the yeast, split the batch the way you like it. Back sweeten the part for your wife label whose bottle is whose. Cork. BTW. I frozen juice + 1 can water = 20 Brix . It takes about 18 to 20 cans + water to make 5 gallons. Pectin enzyme is a good idea.

Similar to the way I make it, very suprising how good this actually comes out if you can wait several months to age properly. Btw, 4 teaspoons equals 1 tablespoon, I think u might of put 8 Tsp of yeast energizer. More the merry though

hi!! I've made followed your recipe, left my wine in the carboy for a month, then reracked for another month and bottled the wine. I checked my wine bottle on the 2nd day, there is stuff floating around inside the wine bottle. Did that happen to you? there was not sediment after I reracked the wine... I waited 10 weeks and this happened.

hey there, I would suggest opening the wine and see what it is. It sounds like your batch got infected. If so it will not be drinkable. Sorry to hear that. I try to use 1-2 campden tablets after the 2nd rack and during bottling. It helps prevent infection.

Odd, please let me know what you think it is once you open a bottle and see. It may have gotten contaminated some how. It can happen unfortunately.

The smell you had in your hooch juice is Hydrogen Sulfide... You can get rid of it so you dont loose the wine again... Im in the middle of a 6 gal. Peach wine from fruit batch. I got it to, it happens sometimes.. Im actually making a video of the process.. I hate to see folks lose a batch of wine if it can be fixed...
