Fat is not unhealthy. Not even saturated fat. That's outdated nonsense and has since been disproven. Of course, EVERYTHING is unhealthy if you have too much of it, but even saturated fat is necessary. In fact, it's vital for hormone production. Why don't old folks homes offer vegetarian menus? Because nobody asks them to. Because old people are never vegetarians. Seriously, the veggie movement got big in the 60's. If they were living longer, almost ALL the old folk would be veggie by now. Instead, it's almost none of them. Oh, and let's not forget that the harmful additives in processed burgers are actually derived from PLANTS. So, enjoy your meat, folks. Don't listen to the veggies who come on here trying to change everyone else's diet rather than just shut up and enjoy their carrot.

However, the type of fats you eat need to be in proper proportions. For example, we should have NO transfats. These transfats are a by-product of hydrogenation reactions, and are not found naturally in foods. Thus our enzymes are not stereospecifc to break these. In order, we should be eating mostly unsaturated fats, with the tinniest amount of saturated fats, and almost NO transfats.

Yep. And you'd be amazed just how many so-called unhealthy foods already have the right proportions of the right fats. It's crap like burgers that mess you up. Which is a shame, because I do love a cheeseburger. Still, it's better to enjoy a life of 75 years than live to be 76 by denying yourself pleasure.

Dwij Patel No, your diet really doesn't make much difference. People who want to sell your "raw" and "organic" foods at a huge markup always talk about people in one country living longer than in another. So, even THEY, the people whose profit depends on scaring you into eating expensive food, can't find evidence to support their claims. Because to say people in Okinawa or Greece live longer is one thing. To say it's because of their diet is a leap with no logical step. You'd need to compare people in the same country with the same lifestyle who were all either smokers or non-smokers and all of the same height and weight. I ask again: Where are all the really old vegetarians? When you look at any group of people over 100, health nuts, veggies and former athletes are all conspicuous by their absence.

Wow. I just made this burger (with a few small modifications) and it's unbelievably good. Made one strip of bacon while boiling the potatoes and then fried them in the bacon fat. Waste not want not, and it's really good. Also, it's nice to dump some onions right into the pan with the burger so they semi-carmelize in the oil.

1. The fires that you buy in supermarkets (frozen) are first also washed (preboiled) in hot water baths so it washes out ingridients that would make them go brown too quickly. If you didn't do it they would go brown/black in minutes and still be raw in the inside. 2. This is basic cooking for ALL things (fries, fish, meat etc) NEVER PUT COLD FOOD IN COLD PAN! Everything you put in there will absorb the fat/oil and then it's like eating a full mouth of grease. Always put food in extra hot pan.

Exactly. Most have been soaked/boiled in a mixture of water and touch of sugar so the fries will brown better when you get them home and cook 'em..

@solusdiver A) There's no difference between HFCS and Cane Sugar, all Ketchups contain sugar. B) Olive Oil IS a healthy fat. Same with fish oil. But "healthy fats" are still enormously calorie dense. My point is that the nutrition profile of these hamburgers are virtually identical to a Big Mac. Probably around ~550-600 calories with 30g of protein or so, with just as much fat. Fats aren't bad, consuming more calories than you expend IS.

Just boil until they're fork tender. (When you stick a fork in it should go through VERY easily). If you want even more fluffy, cook it until it JUST starts to break apart.

Refined olive oil is actually not a bad idea for use when frying or baking at moderate temperatures, of course you can't exactly sear meat or do a proper stir-fry with it due to the low smoke point. Extra virgin should be used for dressings and drizzling only.

Another fantastic dish from Ramsay. Made this today but with a bit more expensive meat. Ground up a very nice and marbled ribeye, other than that, done same as Ramsay. What a burger... I've never done a relish before and was skeptical (not the biggest fan of them), but it fit in so perfectly well with the meat - I was pleasantly surprised.

Grinding your own meat just before you cook it is healthier if you are up for the extra work. Grinding meat increases the surface area which is where potentially harmful bacteria tends to be. Over time the population of bacteria grows rapidly so reducing the amount of time it sits ground up reduces the potential of getting sick by eating it. With other good food safety habits such as clean hands and cookware it is rarely a problem but you can further reduce risk by waiting to grind meat.

Medium is fine for all ground meat. If you grind the meat yourself (which he didn't in this video, but probably usually does when he's cooking professionally) you can do it as rare as you like. I do think a lot of his other choices in this video were kind of bizarre though (overseasoning the meat and using ketchup).
