Today we will prepare low-calorie, low-carb and high-protein ice cream without heavy cream and sugar. For me, this ice cream is a worthy replacement for ice cream from the store. Especially considering its composition and excellent ratio of proteins, fats and carbohydrates.

📄 Ingredients
▪️ Soft cottage cheese 150 g.
▪️ Milk 75 ml. (I have 2.5% fat)
▪️ Original whey protein 40 g (can be easily replaced with skimmed milk powder)
▪️ Albumin 12 g is a dried protein from a chicken egg, you can replace it with 3 chicken egg whites, for safety I recommend using pasteurized proteins)
▪️ Water 84 ml. (only for soaking albumin)
▪️ Sweetener (I have 30 g of Erythritol 1 g of which is equal in sweetness to 0.7 g of sugar + 1 g of Fitparad No. 7, which is 5 times sweeter than sugar)
▪️ Vanilla to taste
▪️ Salt pinch
