As some of you may already know, I have a full-time job in Tokyo, which makes it a bit challenging for me to upload videos consistently 😭
I've decided to create videos at my own pace. I hope you won't forget about me and that you'll drop by to watch my videos from time to time 🙏🙏

★Ingredients
1. Eggplant stir-sly with oyster sauce
⏰15mins
500g≒18oz eggplant
potato starch (or corn starch)
3 tbsp water
2 tbsp sake
1tbsp oyster sauce
1/2 tbsp soy sauce
1/2 tbsp sugar
chilis to finish
2. Broccoli & egg salad with mayo
⏰10mins
1 head of broccoli
2 boiled eggs
3 tbsp mayo
1 tbsp soy sauce
bonito flakes
pepper
3. Teriyaki chicken tenders
⏰15mins
300g≒11oz chicken tender
potato starch (or corn starch)
sesame seeds
sansho pepper or szechuan pepper if you have!
★for seasoning
salt
pepper
mayo
sake
★sauce
1 tbsp sugar
1 tbsp sake
2 tbsp soy sauce
2 tbsp mirin
4. Simmered radish & carrot
⏰30mins
150g ≒5.3oz carrot
400g ≒14oz radish
600ml≒2.5 US cup water
1 tsp dashi powder
2 tbsp soy sauce
2 tbsp mirin
5. Simmered bell pepper
⏰15mins
250g ≒9oz bell pepper
100ml ≒0.4 US cup water
1 tsp dashi powder
2 tbso soy sauce
2 tbsp mirin
2 tbsp sake
bonito flakes
6. Marinated red cabbage
⏰20mins
1/4 red cabbage
salt
1 tbsp vinegar
1 tbsp olieve oil
walnuts
1 tbsp sugar
7. Miso tofu
soft tofu
miso
mirin

Thank you Yuka! A suggestion: it would be easier for people from other countries to follow if you told weight of the chicken, carrot etc like you did with eggplant

Red cabbage is at it's best during the autumn/winter in the UK. I often add it raw to coleslaw for extra colour, and I like braised red cabbage as a winter side dish (braised with red wine, apple and bacon). Broccoli is my daughter's favourite vegetable.

The broccoli and egg mayo salad looks so delicious. Ive used the fork method for the tendon it’s so much easier then trying to cut it out.

So happy to see a new video! Just a tip--I use a paper towel to keep a good grip on the chicken tendon.

If you worried about the tendon, I read it is easier to use a fork to remove it. I think I also saw someone doing it with a fork but it is a bit difficult to describe... Wonderful recipes as usual, I haven't had that broccoli egg salad for a while. Need to try the chicken tenders! Never used mayo for them before...

easy way to get rid of the tendon in the chicken: place the tendon between two tines of the fork and with your other hand grab the tendon to hold it still and you should be able to push with the fork and the tendon come out easily. takes a lot of force though so i grab the tendon with a towel to help me hold it better.

Just a quick question to the tofu recipe you presented at the end: will it really still be good after 1 week, so may I try it with a calm heart? 😊 One week seems soooo much time for me😂. Hello, thank you for these great dishes, ❤ but the eggplant stir-fry sauce in the video has a lot more water than the list of ingredients says. What is correct now?😅 2:14

4:29 I use scissors, if I use a knife my hands get really cold from the chicken, I can’t feel them properly & it makes me miserable 😂 I find it tricky with a large knife to remove it, but my small knives just aren’t sharp enough…no matter how much I sharpen them

To be honest, tofu is nothing at all like vegan cheese. I have tried it before and I am not vegan. Vegan cheese is similar in taste but the cheese is more bland and it is hard in texture.
