Herb Crusted Prime Rib- Smoked Rib Roast on the Weber Kettle
#webergrill #primerib
Rub-
1/2tspn ground coriander
3/4 tbsp turmeric
1/2 tbsp ground ginger
1/2 tbsp marjoram
1/2 tsp nutmeg
1tbsp dill weed
1tbsp Italian herb mix
Salt to taste after slicing
Binder-
Horseradish sauce
Wood-
Pecan
250°
For 1 per pound or until internal temp is 118°
Pull and tent to rest for 20mins
For sauce-
Trimmings from roast
1 tbsp better than bouillon beef
1/2stick butter
2 sprigs rosemary
1 cup red wine
1/4 cup balsamic vinegar
1 small shallot
Brown the meat
Deglaze with bouillon
Add 1/4 stick butter
Fine sliced shallots
Simmer 10 mins
Add wine. vinegar and rosemary
Simmer 10mins
Add 1/4 stick cold butter slowly stirring in
Top with black pepper

So this is where I get confused. With charcoal you're supposed to wait till its ashes over. But this video shows the opposite. Just put meat on when the charcoal is lit.

This is called the “minion method”. When doing prolonged cooks, not over direct heat like grilling, you get a portion of the coals hot, and then set your grill and start cooking. The hot coals work their way out, for a prolonged consistent cook.

When grilling- steaks, burgers, pork chops or hot dogs, absolutely ash all the coals over. For long cooks utilizing the slow n sear accessory, you can set it up for the minion method. There’s other methods like the snake method that work similarly. Of course, if you prefer, you can ash over a smaller amount of coals and add more hot coals throughout the cook as they burn down. But that’s a lot of extra work with negligible difference in flavor profile.
