Hi Jose, I’d recommend you try Indian (specifically : punjabi) Achaar, which is basically an indian version of pickles. It has alot of variations like- mango achaar made with unripe mangoes, carrot/lemon/ginger achaars too. They’re tangy with a little bit of a spice kick. Try them with stuffed parathas. The best one is Aaloo parantha (stuffed with potatos). And a cup of some good Indian CHAI.

Brother... Kamal... My mum worked with a Sikh guy years ago and he gave us whisky and these unripe mango chunks they were jarred... I think you've just given me the name... Achaar. Maybe my favourite snack ever and I've only had one jar.

@@Kamal..1302Nah, store-bought mango achaar doesn't even come close to a homemade one. The store-bought one is either too spicy or too sour and often times the mangoes in them have no skin.

I love pickled anything. fyi, you cut off the tops. The carrots are the root, also bay leaves have tannin that helps keep crunchy

I've always wondered, why does the brine have to be boiled? Could you just add everything in room temp and leave it for a few days the same way? Great videos too.
