Smoking a Prime Rib with your Pit Barrel Cooker couldn't be easier. You will absolutely love the Smoky flavor.
Ingredients:
1 big piece of Prime Rib (mine was 12 pounds)
Kosher Salt
Black Pepper
Garlic Powder
Onion Powder
Fresh Thyme
Fresh Rosemary
Chopped Garlic
Steak Seasoning of your choice
Start by applying a heavy amount of Kosher Salt all over the Prime Rib. Then sprinkle equal amounts of Garlic and Onion Powder and Black Pepper.
Mix in a bowl some chopped Rosemary and Thyme with some Steak Seasoning and a few spoonfuls of Chopped Garlic. Mix into a paste and apply on all sides of the Prime Rib. Allow to sit at room temperature for at least an hour.
Hang Prime Rib in Pit Barrel Cooker with the Fat Side facing the coals. Add a few pieces of Hickory Wood and smoke for 11/2-21/2 hours or until you get an internal temperature of 124-125 degrees.
Remove and cover loosely with Foil for at least 20 minutes. Slice and enjoy!

@@SmokingBBQ I just bought a new Pit Barrel Cooker - So far only have made 2 - 5 pound Pork Loins - Turned out awesome. Love watching videos to get ideas to try. Hopefully Prime Rib next week. I was curious though have you ever thought of injecting a Prime Rib ?

@@stenny1970 Personally I would never inject a Prime Rib. It taste wonderful with just basic seasoning. Save the injection for cheap cuts, like Pork Butts or Turkeys.

Basting definitely wasn't an issue here. As moist of a prime rib as I've ever seen.

Waterman one I’ve done this with different cuts of meat and you’re right! Fat side up equals fat dripping onto the meat and keeping it moist. Also it allows the heats to sizzle the fat into the meat adding loads of flavor and color 👍🏾

Erik man I would love to cook one of these but the price scares me. What if you mess up lol and your eating a pricey piece of meat that’s just ok lol. Great info loved the cook. Came out great.

Yea, it is an expensive piece of meat, and my first instinct was cooking it sous vide to assure it was cooked perfectly and then smoke it for a few hours. But my wife Monica encouraged me to do it from start to finish on the Pit Barrel Cooker, and told me she had faith in my ability, to trust myself and my skill level. Glad she did, as it came out perfect, and gives sous vide a serious run for the money. Thanks for stopping by and the kind words!

Little bit of cheating involved with the Au jus in this video. I used beef stock and a dry package of mix this time. Normally I prefer the juices, but I just couldn't resist hanging that beautiful prime rib from hooks in the PBC. It came out great! Thanks for stopping by!

I set the bottom vent according to the instructions from the Pit Barrel Cooker Company. It is based on your elevation. Since I live in southern California which is near sea level, my vent is adjusted to 1/4 open. Thanks for stopping by!

I would agree with pork or chicken bones. But I see no problem with a Beef Prime Rib Bone. My dog loves it, and has never had an issue.
