Honored to be featured again! And I agree, 12 slices is tough from a 9 inch pie. But it's hefty in the fat and calorie department and so it really makes sense to cut back on the serving size. Even if it is low carb! You did a fabulous job of both pies. I love custard pie too and have one in my Easy Keto Desserts cookbook. :)

I made the custard one this morning because it looked easier and my time was limited. I totally agree about the time. I cooked it at 340 for 45 minutes. I started checking for color at about 25 minutes...but I should've been concerned about consistency instead. Next time, I'll quit at 35 minutes. Don't get me wrong, it's delicious...and I'm having NO PROBLEM going back for more!! I WILL add this to my personal favorites. So so easy!!

I have to say Wes, the custard pie which was baked looked absolutely beautiful! I love to see keto/low carb baked goods with color (particularly the crusts), because so often I think they look kind of anemic in that department, especially mug cakes!🤣

Coconut cream pie has always been a favorite, can't wait to try these. I worked in a large-scale bakery years ago and when they would mix up a big vat of filling I would get a bowl scoop some out and eat it warm for lunch.... SO GOOD! :)

Coconut Cream Pie is my all time favorite pie ever! Before keto, I was a "pie baker", cakes, not so much. I have made both of these. Ketoserts was delicious and moist but didn't give me the reminiscent texture combination I missed. Had Carolyn's, and WOWZERS! It's my goto now. Love It

Ok, I've made this twice now. As I stated in a previous comment, 340 degrees at 40 minutes was too much. Came out kinda dry like a macaroon (that's a bad thing?). HOWEVER, the second time I used my corning ware cornflower blue pie pan and that worked! The first time was in my stoneware pie pan. Love this! It's easy y'all...and I melted a few dark chocolate chips on my plate underneath the slice... Seriously, it rivals my love of bacon.

Uncanny timing, I've been thinking of making one of those for the last 2 weeks. Thanks, Wes ☺️☺️☺️

Made the coconut custard but simplified (to me) the procedure. I put all the liquid ingredients and butter, PLUS the coconut, in a glass mixing bowl and put in microwave for 2 min. I let the coconut just sit there getting happy as the mixture cooled a bit while I did a few other chores in the house. Once safe to add the eggs, I beat those in, then beat in the dry ingredients. As I live alone I cut the recipe in half to make 4 servings and baked them in little one piece (buttered) individual tart pans. Topped with the extra coconut per the recipe. Baked for 15 min, turned off oven and let sit for an additional 5 min as the oven cooled off. Because I had an extra egg yolk left over from another recipe, I threw that in and they were terrific....going to do that on purpose from now on. LOVED THESE!!!
