Ingredients:
Oxtails:
2.5 - 3 lbs oxtails
1 lemon/lime (for cleaning)
1 med tomato
1 med yellow onion
2 green onion
1/2 bunch celery
fresh thyme (to desired tatse)
salt to taste
black pepper to taste
1 scotch bonnett pepper (either slice or leave whole)
1/2 tsp ginger paste (or tsp fresh ginger)
1 tbs garlic past (or 3 garlic cloves)
1 tbs ketchup
1 tsp allspice
2-3 tbs Worcestershire sauce (or soy sauce)
browning & seasoning sauce (as desired
2 bay leaves ( optional)
oxtail seasoning (or all purpose seasoning to desired taste)
400 ml can Coconut milk (optional because coconut milk is not typical in an oxtail recipe)
(or just simply 400 ml water )
400 ml water
vegetable oil (or olive)
Cabbage:
1 small cabbage head
EVOO
1/2 tsp ground chicken boilion
1/2 red pepper
1/2 green pepper
1 large carrot
1 small yellow onion
2 green onion
1 tbs garlic paste (or 2-3 cloves garlic)
1 tsp granulated chicken buollion
fresh thyme
salt and pepper to taste

In Trinidad and Tobago 🇹🇹 we add coconut milk to all our stew.. But we pressure our meat. This helps the meat to fall of the bone.

This had my mouth watering at work so badly I just had to make it. I bought every last ingredient on the list and made the entire meal from this video, step-by-step as she did...and POW!!!!!! It was soooooo good that me and my husband were giving each other "five" while we were eating it. I took a plate to my friend at work the next day, and she was just shaking her head and smacking all at the same time. She LOVED IT! It tastes just like it looks..and that rice was so creamy and good, I couldn't believe it. TRY THIS ASAP! I'm making another pot of the ox tails for Christmas..they're marinating as I type. Thanks young lady an easy and delicious recipe!

Heres a tip instead of 3 hours, throw them in the pressure cooker for 1 hour. I have the Instanta Pot and meat falls off the bone.

This looks lovely Miriam. A jamaican here and I love that you added the coconut milk to the oxtail, though it's not what we actually do here. I will definitely try it cause I love coconut. When some of us add the scotch bonnet to the rice and peas we add it whole without bursting it. You get the flavour of the scotchie but not the heat.

I’m from Costa Rica, and the Caribbean side is Jamaican influenced. We call that: Rice and Beans 🤤 Rice and Beans are cooked in Coconut milk. And we side it with chicken, beef, fish or shrimps also cooked in coconut milk. Fried sweet plantain and lettuce salad. SO GOOD! 🤤 Is my favorite dish!

So... for years I have been wanting to make oxtails but have been so intimidated because of the cost (and not wanting to ruin it) and having different oxtails that were either absolutely delicious or just cooked but lacking flavor. I took a chance and made this recipe and BAAAABBBBBYYYYYY!!!!!! The flavor on point. My guests were raving it was good and were pissed when they were gone. I cannot thank you enough!!! My new favorite person. Looking forward to doing this recipe again and trying others!!!!

I don’t eat meat anymore but my mom who does, uses a pressure cooker for oxtail and goat. It cooks and softens the meat faster tastes just as great.

I cook my oxtails in a crockpot but never time it. I just cook them until it’s falling off the bone. I definitely want to try my cabbage like that tho and Great presentation Miriam. Stay safe and blessed!

Everything looks amazing those cabbage were cooked to perfection and I’m Jamaican. I’ve never had coconut milk in my oxtails but I’m gonna have to try and a tip to cook them faster is using hot water and not cold. Let’s see that short cut rice and peas and goat is my absolute favorite

On behalf of all the Jamaicans watching this, great attempt! However authentic Jamaican oxtail (no ‘s’) isn’t seasoned with ketchup and boiled down in coconut milk....looks tasty though ...if you ever visit here, just drop by lemme fix some for yah!!!

I was wondering when someone was gonna say that. Everyone was complaining about the coconut milk only but I was like ketchup, worcestersire sauce, and ginger..i showed my dad and he almost fell out the chair..maybe she should have said Trinidad oxtail cause that must be too sweet with those flavors

To make this easier . Use a pressure pot after searing the oxtail for 20-30 minutes . Then simmer down with seasoning. 3-4 hours is just madness Jamaican here☺️😊
