Ingredients:
1lb dry red kidney beans (soak in 2 cups water overnight)
1 lb ham hocks (cook in 2 cups water)
1-2 tsp granulated chicken bouillon
1 med yellow onion, 1 green bell pepper, 2 strips celery (Cajun trinity)
4-5 cloves fresh garlic
1 tsp cayenne pepper
1 tsp oregano
1 tsp dried thyme
1 tsp garlic powder
1 tsp smoked paprika
1 tsp black pepper
2 tsp kosher salt
2 bay leaves
4 cups water
13 oz pkg andouille sausage
1/3 cup fresh parsley
*taste and adjust as needed
*simmer 2 - 2.5 hours
Fried Chicken:
6 whole wings split
1/3 cup hot sauce
1 tsp onion powder
2 tsp seasoned salt
1 tsp smoked paprika
2 tsp garlic powder
1/2 tsp oregano
1 tsp black pepper
1 egg
*marinate 2-3 hours
Chicken dry batter:
1 cup all-purpose flour
Same dry ingredients (use a full tbs of seasoned salt)
Other:
2 cups white rice (measurement uncooked)
green onion to garnish
Vegetable oil for frying

Cornbread
