BEEF FAJITA SOUP RECIPE
Measurements for 2 servings, adjust as needed (I prepped and measured some at home to save time and messes at camp)
1 whole yellow onion
1 green bell pepper
1 lime
2 cloves garlic
1 scallion
1/2 oz pepitas
2 1/4 oz roasted red peppers
10 oz ground beef
1/2 tbsp paprika
1/2 tbsp cumin
5 oz enchilada sauce
5 oz coconut milk
2 tsp cholula hot sauce
dice onion into small pieces, cut green bell pepper into strips, zest half a lime then quarter the lime, mince garlic, thinly slice scallion
Place pepitas in a dry large pot over medium heat. Toast 2-3 minutes shaking pan frequently. Transfer pepitas to a cutting board and allow to cool.
Heat about 1 1/2 tbsp of oil in large pot over medium heat. Add onion, bell pepper, roasted red peppers and lime zest. Season with about 1/4 tsp salt and !/4 tsp black pepper. Cook 3-4 minutes or until veggies soften.
Add Ground beef. Season with paprika and cumin, 1/4 tsp salt and 1/4 tsp pepper. Stir to break up beef. Cook 4-5 minutes or until fully cooked, stirring occasionally.
Add garlic and enchilada sauce to pot with beef and veggies. Drizzle with about 1tbsp cooking oil. Season with about 1/4 tsp salt and 1/4 tsp pepper. Stir to combine. Reduce heat to medium low. Simmer about 5 minutes to allow flavors to meld, stirring occasionally.
Divide beef fajita soup between bowls. Squeeze juice from 1-2 lime wedges over each bowl. Sprinkle with scallion and pepitas. Drizzle with cholula sauce. ENJOY!
