⬇️⬇️English recipe follows⬇️⬇️ 腐乳蒸雞: 材料: 雞扒2塊 支竹4條 腐乳 處理: 1. 支竹用清水浸約2小時至軟身。 2. 雞扒用清水解凍。 3. 雞扒已解凍10分鐘,用粗鹽乸5分鐘,去除雪味及雞腥味。 4. 洗淨雞扒,擎乾水。 5. 雞扒切粒如拇指般大粒。 6. 用廚紙索乾雞肉。 7. 雞扒調味: a. 腐乳5粒(壓爛) b. 生粉1茶匙 c. 糖1茶匙 d. 生抽1 1/2茶匙 e. 胡椒粉少許 攪勻,醃1小時以上。 8. 支竹切細舊。 9. 芫荽切去根部,切粒。 10. 辣椒仔切粒。 11. 放支竹上碟,雞扒鋪上面。 烹調: 1. 煲一大鑊水。 2. 蒸20分鐘。 3. 蒸了10分鐘,用筷子攪鬆雞肉。 4. 蒸了20分鐘,完成。 5. 鋪芫荽及辣椒粒在雞上面,完成。 Steam chicken with fermented bean curd: Ingredients: Chicken steak 2 Nos. Bean curd sheet 4 Nos. Fermented bean curd Preparation: 1. Soften bean curd sheets in tap water for 2 hours. 2. Defrost chicken steak with tap water. 3. Chicken steak has been defrosted for 10 minutes. Season with cooking salt for 5 minutes to remove unpleasant smells and tastes. 4. Rinse chicken steak with tap water, hang dry. 5. Dice chicken steak with size 1cm x 4 cm. 6. Dry chicken steak with kitchen towel. 7. Season chicken steak : a. Fermented bean curd 5 Nos. b. Tapioca starch 1 tsp c. Sugar 1 tsp d. Light soya sauce 1 1/2 tsp e. Pepper little Mix well. Season for 1 hour or more. 8. Cut bean curd into small pieces. 9. Cut away root of coriander, then dice. 10. Dice red chili. 11. Put bean curd on plate first, then the chicken steak to be put on top. Steps: 1. Boil up a big pot of water. 2. Steam for 20 minutes. 3. After steaming for 10 minutes, stir the chicken steak by chopsticks. 4. Already steam for 20 minutes, complete. 5. Put coriander and chili cubes on top of chicken. Serve.
@Winnie, I tried corn starch (white color), cornmeal (yellow color) and flour (white color), turnout not as good as it supposed to be, hope 師傅能幫忙,或者可否有個照片好像腐乳jar 一樣如有英文最好
