Most importantly it should be fun, whatever you do. If you do a hilarious cheese and you enjoy doing it, cool. If you have a fair fight with a boss because it'll be more fun for you if its challenging, also cool. Vice versa, if you do a cheese tactic because you feel that you have to or its the most optimal way to play then that may be a case of bad design. Also if you begrudgingly do a boss you hate in a "fair" way because of some imaginary brownie points then that's pretty lame too. My rule for Elden Ring on my second playthrough (first was anything goes pretty much) has been "Fair fight, unless they bring their bro. Then I bring mine." So far it's worked out pretty well for me, but I'd advise anyone playing their first playthrough to do anything you can to win in the most fun way possible and don't be afraid to experiment.

Cheese is fine as long as it's really only in single-player. Unless there's some sort of leveling exploit available to everyone, in which case it's fine but it's _definitely_ getting fucked patched.

you'd regret it once you cheesed the hard and interesting fights like that dragon from before, its a dank ass dragon that you should fully experience... but for tree guards its a pass, you meet them so many times so cheesing that for the sake of getting over it is fair

I imagine they feel a lot of pressure on boss fights in a game like this. Granted, I'm not good at the game but there have been some bosses that took me multiple nights after work to beat. Trying to be entertaining while getting stomped during your attempts to learn a fight over the course of hours would be frustrating, for me anyway. Tossing some dingus down an elevator shaft would be hilarious.
