I finally dared to use grandma's pressurercanner...This is a happy girl! I got 8 pints of veggiesbroth i my cold pantry, and 6 halfpints of bonebroth. Everything i learned is cuz i looked on ya videos, Bev :-) All the best from Norway.

Hey, Girl! Great job with the leeks and celery!! We finally got some rain here in Central Florida - It's been dry as a popcorn fart for a couple of months. We have two gardening seasons here, so I try to make the most of them. This year, I decided to put my little suburban garden on drip tape irrigation, and I'm so glad I did! Between no rain and temps in the 90's, many gardens just dried up and died, but so far, I've got bush and pole beans blooming, cucumbers and squash almost ready to bloom, and beets up about an inch. Now is the time we plant kale, collards and broccoli, so those were planted out yesterday. I'll be planting cabbage, carrots, onions and leeks between now and November 15, and then spinach and lettuce. I don't know what I'd do without the garden! Sure, there's costs involved, but the savings over all, especially if you can and dehydrate what you've grown, that makes that garden one of the most valuable assets I have!

Not had leeks before. I am planting some this year in containers. My parents planted what they grew up eating in SC. Daddy 92 will not eat anything different. So I make things I like and freeze it for days there are not enough for 3. I love soups at night during winter. Just bought a dehydrator am learning so I will be ready for harvest next year. Thank you for helping me mama 94 and I are using containers and raised beds as she is on a walker and I have back problems. I am here to help with my daddy. So one of us has to be in the house at all times. Dehydrating will help with freezer space.

Good Morning From Cajun Country! i just wanted to say "Thanks!" I thought i was the only one that saves veggie leftovers for stock, :) I process my veggies all at the same time, and all the left overs (onion, bell pepper, celery and green onion) get cooked down into broth. I get called O'Cheapo by my family. So now, i don't feel so bad, i am not the only one. Hugs and loves from New Orleans, Louisiana U.S.A or as we say it "Nawlins"!

Oh Bev, I learned so much from this video. I think my freezer will become a compost pile. I can think of all sorts of veggies that I cut off the ends, scrap the skins, use the leaves. If I just toss all that in a stew pot and simmer for awhile what a base I would have for my stew. I just recently bought a new strainer stirrer like you have. I use it all the time.

Looking forward to seeing next years massive veggie stock video! We save all scraps of carrot, onion, celery and garlic and store them in gallon bags in the freezer. When chicken or turkey bones are available, we make stock. One carcass, one gallon bag of scraps, one gallon of water, pressure cooked for one hour makes the best free stock ever.

I'm in Central Florida - There are certainly some challenges gardening here in the South - We have more bugs, weed pressure and disease here, but there are great solutions for all of these. I love that I can pretty much garden year 'round. Is this your first Florida garden, or have you been here a while?

Yes I have a couple of bags of 'waste' veggies and jars of frozen broth. So easy if you decide to make a soup or stew Instead of using commercial stock cubes with so much salt. Thanks for all your encouragement

We used to go to a particular produce store in town which would heap banana and apple boxes with produce tney had culled then sold for $2 to $5 a box; prob $4-$10 in today's dollars. When we got home, I'd cutt off anything bad then prep or freezing. - Every so often they woild give us a free box if tne produce was looking bad or they didn't think they woild sell it before it got particularly sad.

Love your videos! I'm new to pressure canning and the instructions say to have the weight jiggle 3 or 4 times a minute. If it jiggles more is it ok or do I need to start the time over?

It’s you’re garden and you’re doing this for you’re family. So you might say gotta eat right. You can go to the grocery store where of corse they charge more because of all the work people have to do to till , plant, and harvest and then ship to stores etc. or grow it you’re self cheaper. May be work but , you’re saving money and eating healthier and you don’t have to go grocery shopping as much which I hate and it keeps you busy. Love you’re channel. Question are you in Canada.?

I just wash them. Make sure they are really dry before putting your dehydrated food in them. I also use a vac pack jar sealer to keep them airtight.

@@russsherwood5978 I am thankful my mom taught me to sew and cook but not to knit, that I learned from a booklet. I grew up with my dad working on his cars and I know the difference between a flat head and Phillips head screwdriver. I also know when a car's alternator is going bad.

Mrs. Bev I'm wondering if a person can't have a continuous bag going in the freezer for bits and pieces or are we to do individual bags for new additions? What's your thoughts?

Exactly and I used to do it to save all those bits and pieces for my pigs however I'm now going to save them all for the end of harvest and then I'm going to make a huge profit of everything but it's going to happen next year

Just because you buy electricity for other purposes in other parts of the year, doesn't mean this electricity is free. If your bill never changes much, you might not notice it as much but, like it or not, it still has a cost. If you didn't do any dehydrating whatsoever, then your bills would be a little bit less in the fall. They stay the same because you are choosing to buy that electricity to run the dehydrator(s). Doesn't mean it's not a good idea to dehydrate - but you can't just write off a cost because it's not noticeable.
