As a Mexican in Mexico I approve of this salsa. I would skip the honey, but a bit of localized flavor is a good thing, it promotes creation of new flavors.

@@CowboyKentRollins I would use the honey , BUT, what I was told by a beekeeper was that for cooking, you should use the darkest honey you could find. He had some Cotton honey that was pitch black and was perfect on steel cut oatmeal. He uses it for BBQ sauces also. The darker the honey, the stronger the flavor. Use the lighter colored honey is for sweetening tea or something like that.

The garden salsa is something that I could eat all day every day. As a child, we used to pour some over eggs for breakfast (along with some bacon or sausage and some potatoes).

I grew up eating home grown tomatoes, and there's no better tomato than one you grew yourself, and ripened on the vine. I fondly remember bringing home bacon from the meat market i worked at, a fresh picked tomato, and fresh picked loose leaf lettuce. Even on plain toasted wonder bread, made the best doggone BLT you ever ate.

Kent, okra's delicious and good. They're great when they're both pickled mild or hot and breaded and fried. You take okra when they're sliced and season them and coat them in flour and fry them. 2 different ways of frying them. Okras great with corn, tomatoes, bell peppers. It's called Succatashe. Nothing better than fresh salsa Fresca I tell you. 😋

Thank you. When we can our salsa, we take the extra juices (like you poured off) and can them also. We call it "Dirty Tomato Juice", then add a jar to out chili or vegetable soup. God Bless and stay safe.

I love home made salsa, I'll have to try these recipes. I really love your campfire cooking and story's. I have a lil story, way back when I was younger my husband and I planted a garden. Everything was growing good and sprouting except for my tomatoes. My mom and dad were visiting one day, they looked at my garden and my dad said, you need to get a good switch and give those tomatoes a good switching, I started laughing. He said I'm serious, their not getting the sap they need. So I found a pretty good switch and switched them. 3 rows of non bearing tomatoes. By the next week they had blooms 😮. Those tomatoes started coming out and made big beautiful tomatoes. Of course I called my dad and he was over picking tomatoes for him and mama. Have y'all ever heard of that? It works!!! Thank you for sharing as always 😊

One of the things I miss most about living in Texas was some of the salsa. Now I’ve been looking for that missing ingredient from my salsa to match some of my Texas favorites, and so I am gonna try your ancho chilies. It’s got the look of what I remember. For a saucy salsa, I love using mesquite smoked tomatoes!! I just pop some tomatoes in the smoker when I'm running something else, and some jalapenos because chipotle!

Mr Kent, Milton here from a Southeastern NC. Now I bout 20 or so years ago started with Bush’s Black Beans salsa off the can. And over the years, like you I have cowboyed this up a couple of notches - well a bunch! Now I have been studying on this, my next batch I am going to make the second salsa you have here and swap out the Kraft Zesty Italian dressing. (never considered putting honey in my salsa, give that a try too). 16 hours latter, hey to Mrs Shannon.

Both of those recipes will also make an excellent spaghetti sauce. In those cases, don't drain the tomatos. Use all the juice and make a puree. Add cornstarch if needed for the spaghetti sauce.

a simple way to get rid of squash bugs or potato buds I heard was take a thin board like a long paint stirring stick and cover one end with axle grease and poke it in the ground near your plants deep enough so it dont tip over and the bugs with migrate to the grease and stick to it. They stay off your plants then

Between the heat, rats and raccoons (south Texas), we literally harvested zero large tomatoes this year after a bountiful season last year. But I still want to make and can fresh salsa. Hopefully I can still use your recipe with store bought tomatoes. Even my peppers, although flowering, are not producing fruit. Thank you so much for sharing!
