@@jefflee355 Colorado born and raised. Live most of my life in Falcon, CO, a rural area where my family owned 34 acres of pristine plains. Only now do I live in a semi-rural area, where my two closest neighbors have horse stables and an other has 3 cows. I'm blessed with great neighbors, but cursed with homeless drug addicts just .7 miles away... It's a double edge,sword. I love my neighbors, it's 4 generations of people who lived at that spot, but we are so close to druggies who attack other people.

That's the best looking mac and cheese that I've ever seen. I'll be trying it this week. Thank you, Kent and Shannon. I love your recipes and use them at least a couple of times a week. With a few of them, I have to make extra for the neighbors and the lady who rents our carriage house. Matter of fact, I made your goulash for her last night. If you slice up the cheese into planks - more surface area = more smoke into the cheese. Then you can put down foil or parchment on bottom because all the extra surface area makes up for NOT having the cheese on a rack.

Thank you Sir Rollins for the time well spent! Looking to purchase a smoker this year (last year was a kingsford portable charcoal grill) and it wasn’t that easy to smoke with, but came in around $11 😅. My uncle had a masterbuilt smoker, and we smoked lake trout on it (flavor resembled ham). Also mixed up a homemade pizza, smoked it, then cooked it off at the end. We got crazy in the Canadian woods that summer!

Always loved my mom's mac & cheese. She put a little cayenne, dry mustard and Worcestershire sauce in it and baked it with a crust of buttered bread crumbs. But now I've _got_ to try it the way you fixed it!

Kent, one thing I think you should give a try is smoked green bean casserole. A couple of Thanksgivings ago the oven was full and I didn't want to wait to have everything finished. Threw it on the smoker and it was fantastic!

I have one of those cold smoker "spirals" that uses sawdust. It works really well on a Weber kettle for smoking cheese. I learned the hard way not to let the black grill sit in the Texas sun while smoking cheese...

I always love seeing the dogs, for sure. I like that idea of smoking the sausage chub. That will come in useful at other times as well (thinking ground beef). Rolling through Hollis in May on the Harley's on our way from Northern Colorado to K River. It took me a hot minute to think why Hollis was so familiar. It will possibly be our first fuel stop and coffee (relief) break after leaving Amarillo.

I've seen a few videos that the title intrigued me and after every one I'm hungry for what was made. However I'd like to say this, Kent (I'm assuming that's the host of the show) just comes off as an all around great person. Will have to try this on my little kamado grill when the snow melts. Looks delicious! Couldnt help but notice the double bit axe with adirondack handle leaning against the building. I restore vintage axes as a hobby as well as old Coleman lanterns and stoves. Cant beat quality of days gone by. Thanks for keeping the old traditions going Kent.

Thanks for the inspiration Kent, in keeping with our tradition of Good Friday we substituted the meat for shrimp, mushrooms, tomatoes and followed your recipe and it was high fives and a little dance.
