4 Lb Beef Chuck
Hog Casings
8 Cloves Garlic
15 Juniper
4 Bay leaf
10 Allspice
4 Tbs dried Marjoram
4Tbs Paprika
1 Tbs Thyme
4 Cups Ice Water
4 Tbs Black Pepper
8 Tbs kosher salt
1 Tbs Curing salt

I just made this kielbasa today and I am here to say it is the best kielbasa I have ever tasted !!!! I come from connecticut and there are a lot of polish people in our town and they make the BEST hot dogs and kielbasa on the planet!!! Oh did I tell you I think mine is better !!! LOL

Hello Gosia, I remember my mom and dad making Italian Sausage and grinding it and putting it in the natural casing, It was very delicious. I love seeing the difference between the polish and the Italian sausage. so close in ingredients. We always added a lot of extra red pepper. we liked it hot. 💕NonnaGrace

Oh wow I'm just starting the video and I already have the munchies. That's neat how you have those formulas to help get the right about of pickling salt and curing salt. Good job on this video, I really like how you did the editing. Those sausage turned out great and that is a very good way to make use of the extra meat. Good job!
