MAKING SUGAR SYRUP AT HOME IS VERY EASY. IT JUST NEEDS A COUPLE OF STEPS AND A FEW NOTES TO HAVE SUCCESSFUL SYRUP THAT LASTS IN YOUR FRIDGE FOR MONTHS..
INGREDIENTS:
3 CUPS OF SUGAR (600 G)
1 CUP OF WATER (250 ML)
QUARTER TSP CITRIC ACID
1 SLICE OF LEMON FOR FLAVOR AND ALSO HELPS THE SUGAR NOT TO CRYSTALLIZE BACK
RECIPE KEY NOTES:
* PUT SUGAR AND WATER IN A POT, TURN ON THE STOVE AND START STIRRING UNTIL SUGAR IS COMPLETELY DISSOLVED. ONCE IT STARTS TO BOIL, DO NOT STIR THE SYRUP AND LET IT BOIL AS IN THE RECIPE. AT LAST ADD THE CITRIC ACID, STIR, LET IT BOIL FOR A MINUTE TO MAKE SURE IT IS DISSOLVED PROPERLY AND TAKE OFF THE HEAT.

Normally if you don't want crystalisation you'd need to use a 2:1 ratio of sugar to water, put it in the pan, Don't stir the water and sugar at all because it cayses crystalisation and wait till it is boiling and you see more 'thick' bubbles but not leave it for so long that it starts turning amber, at that point you've reached the "cracking stage" on a candy thermometer and you would have successfully made candy but unsuccessfully made sugar syrup. I'm guessing the extra cup of sugar is to make it thicker but the normal 2:1 ratio works as well, and when making sugar syrup for things like drinks you need a 1:1 ratio so it can mix with the other liquids easily. And at this point I realised that I knew all this and still searched sugar syrup recipes up. But this method does seem quite interesting, a little complex yes but interesting nonetheless

You're right. This ratio is usually used in middle eastern sweets where you need to sweeten the various kinds of sweets with less watery sugar syrups to help them stay crunchy for longer. Thank you for your comment😊

You seem to know what youre talking about if you read this after 3 years. Can you make this with brown sugar with 2:1 ratio? I just tried and it didnt come out very thick. Also difficult to know when its turning amber as its already an amber-y colour with brown sugar. And lastly, theres lots of sugar left in when its bubbling and the only option was to stir it. Im guessing thats because brown sugar doesnt dissolve as well? Look forward to your reply

@@Billyb0b557 Safest way is to use a thermometer and the syrup it's done when it reaches the 106 Celsius temperature

Thank you! I did this in the microwave but split the 4 mins to 2 mins each and worked as a charm. A perfect sub for corn syrup!

THIS is the best recipe ever. I'm only using this to moisten the rim of a glass to rim cocktail glasses with salt and sugar. No crystals! I used to skim a thin layer of white foam from the top with a slotted spoon (works great, rinse and repeat), but I didn't get any foam with this recipe. I also used to use vinegar as an anti-crystalizer but used slices of lime and the citric acid exactly as this recipe shows and I got perfectly clear, great texture simple syrup with zero crystalization. =:0)

Common reasons of crystallizing can be the amount of citric acid was little or if a drop of water comes to contact with the syrup after it's ready it will crystallize...😊. Try this way; add a little bit of water on it, boil it for couple of minutes then add a little bit of citric acid and boil it again for a minute, the problem will be solved...

hi betty ,i know this is a old video but what if i want to make strawberry syrup with real strawberries- should i add more sugar to compensate or just follow this recipe? i want to make a heavy strawberry syrup,with real strawberry's.

Hi Nickolai, you don't need that much of sugar to make a really good strawberry syrup. Cut up 1 kg of fresh strawberries, mix with 400 g of sugar, simmer on medium heat for about 20 minutes until strawberries are nicely cooked, stir in 3 tbsp of lemon juice or quarter tsp of citric acid, bring to a boil again. Take off the heat and strain through a fine sieve. Store in the fridge. I hope this helped.

Adding citric acid or lemon juice helps in preservation and avoiding crystalization. But won't it add sour taste to the syrup or bring down the sweetness

No at all because the amount of sugar is huge:-). Of course anything more than the amount in the recipe will start to leave a hint of sourness.

Hi, without an acid the sugar will crystallize back. I suggest using fresh lemon juice about 2 tablespoons( 30 ml) if you don't have citric acid on hand😊.

Is the citric acid needed? Citric acid is made from black mold so I wouldn't want to use it, wouldn't it work with just the lemon, a natural acid?

You can also use certain other acids. Cream of tartar might be a more common ingredient you can pick up in the supermarket in some places, and will stop a sugar syrup from crystallising also.

No, it doesn't work. You need citric acid to make the syrup not crystallize and last for a long time.

Can this be used with canned fruit ? I’m making a pudding that requires a tin of fruit in heavy syrup but I can only get it with light syrup in the uk, so was wondering if I made this could I substitute the light syrup with this for my pudding? 🙋🏼‍♀️

It could have happened for a lot of reasons. Don't skip citric acid step or reduce it. It is very important. Second, if accidentally any water got into the syrup after boiling it will crystallize😊.

@@ljnoble9167 No never use vinegar in sugar syrup and i always add either citric acid or lemon juice at the end. Lime gives a little different taste in my opinion.

Just add about two tablespoon of lemon juice. I prefer a lemon slice because the skin of the lemon will give it a nice flavour.

i also make this recipe its a different one 1. i put alot of sugar then i pour water then mix them more uger you add more tasty it gets so i mixed them up and i drink it i tell you its taste better than any juice ive tried would you try it (i used granulated sugar)
