Learn how to make a nutrient rich stock from your Thanksgiving turkey. So easy and economical. Better than anything from the grocery store.
Freeze in freezer approved jars or freezer bags.
Pressure can quarts for 25 minutes, pints for 20 leaving 1” headspace adjusting for altitude as follows:
Weighted gauge Dial gauge
0-1,000 ft 10 11
1,001-2,000 ft 15 11
2,001-4,000 ft 15 12
4,001-6,000 ft 15 13
6,001-8,000 ft 15 14
8,001-10,000 ft 15 15
This recipe CANNOT be safely water bath canned.

If you use the jars for freezing, over at Rain Country, she shares that she wraps her jars in pieces of soft material like flannel, so that it protects them if they get bumped in the freezer. They can be brittle. I use old thick wool blend socks on mine... you know, the ones with holes in the heel too big to mend. You can cut the foot part off and just use the leg part to cover pints, or part of the quarts. I started using these to protect my jars on the shelf when I lived in earthquake country. Can't wait to make my own stock!

When I freeze any liquids use those inexpensive ice cube trays, I measure out a pint at a time and freeze it then put it in zip lock bags. It is just easier for me to do it that way. So if I just want a bit of stock its no problem, and if I need more, its no problem. I hope this makes sense to someone. Great videos!

I always cook two turkeys eachThanksgiving. I cook one two days before so I can debone and make stock/broth. I use my instapot and usually go 2 hours or so. Love Turkey stock.

Love your videos, thanks for sharing. I Do make stock, I use the Ball freshTech electric water bath canner and multi cooker. I am not comfortable leaving the burner on overnight and also we are on propane so electric is more economical on cooking for many hours.

I made turkey stock yesterday from neck bones. I used fresh thyme but forgot to add bay leaves! Mine gelled a bit but not like it would using heavier bones. It will be delicious.

Cindy Hills I use my stock for a lot of things... as a base for almost any soup (even cream soups, it adds great flavor), making gravy, for simmering veggies instead of using water, even for mashed potatoes in place of part or all of the milk/cream to save calories, for cooking beans (again adding flavor) ... lots of possibilities 😍

Yes I watch her too. I think the best is to use the crock pot for stock. You put 6 qts of water and that cooks down. i would add way more water.

Donna Richey I added 6 quarts of water and got about 6 quarts of stock. If you cook with the lid on, your water doesn’t evaporate 😊

I fixed a turkey yesterdat in my electric pressure cooker. Over night i have cooked the bones and bits in my slow cooker. I am not canning this. I don't use herbs in mine. It is very flavorful. Grandma Sue in central Indiana and Izzi Too

I was watching a recent YT video that featured a lady with 7 kids who is really frugal. She was talking about the importance of holiday leftovers like ham and turkey, their “scrap” and combining them with frozen saved veg scraps and some dried beans. Between her holiday Thanksgiving meal and neighbors donating saved ham bones etc she was able to make 37 quarts of soups and broth by just adding her own veggie scraps and dried beans. So if neighbors are asked to save their bones and carcasses please realize how beneficial this is to families especially in times such as these. She said at first her Neighbors (whom she already knew of course) were taken back when she asked for these meat “scraps” but now they have a system set up to save these precious resources. Think about how much 37 quarts of nutritious soups and broth would cost. With a little work and time, she helps to feed her family on a budget. The old ways are important to remember. Not everyone wants to be a burden on food stamp and pantry systems and acts such as these cost nothing to the donors. God bless everyone. 🙏🏻

Does anyone put it in their pressure canner. I have in the past...the bones are soft when done and the broth gels nicely.

I take the bone broth collagen and use it on my face and I have never had pimples dark complexion spots or anything on my face and everybody keep saying I'm about 20 years younger than I actually was

I wouldn’t but if you do check the ingredients to make sure there’s nothing unsafe for canning such as thickeners

You should roast the carcass first. Mad flavor when adding this step

If I precooked my turkey and added broth, could I also do just broth in jars at the same time? Or would the broth be in there too long.

twospooked some things can take on a burnt or scorched flavor if in the canner too long. I try not to over process things so I’ve never done this. I’m not sure if it would affect the broth or not. Sorry, not much help

I'm a new follower...Love your videos. I have 2 broth canning questions. 1) I'd like to can broth for Pho. Can soy sauce, fish sauce, or hoisin sauce be added before canning? 2) In one video you said smoked meats couldn't be canned. If I smoke a turkey, can the bones be used for canning broth?

Hi! Thank you for your support 1) soy has been used in pressure canning recipes so yes. Not sure about fish or hoisin. 2) yes you can use the bones for stock just not the meat 😊

Carol, I'm fairly new to canning & would like to know why a smoked turkey meat can't be used in making stock or broth. Do I need to take all meat completely off to make it? I love that you showed skimming the fat & the difference of the gel verses fat!

@@BlessedbyJesus1000 you can use it for stock you just can’t can it as meat. They claim smoking meats changes the texture and interferes with heat penetration. You don’t have to remove all of it from the bones just strain it out before canning your stock 😊

I have a question about saving your veggie scraps to put in your stock. I have had people tell me that you should never use root veggie peels and like ends o onions or peels because of botulism from dirt even i they are cleaned, I'm confused is it ok?

Forgive my ignorance it seems so easy. Can you do everything that you do in a regular pot?" Not sure if she is talking about the making of stock or the pressure cooker.

Yolanda, se puede hacer el caldo en una olla común. Pero a poner en latas, se necesita una olla a presión. O se puede poner en la congelador.

I think I missed it, but how much water you put in the bottom of your pressure canner before you add your jars? This will be my first time canning. I sure do miss my grandmother when it comes to needing help with this kind of stuff.

Charlotte Williams for best quality use within 6 months. It’s still safe beyond that but the flavor may start to change 😊

Is there any hint of sweet potato flavor in the stock? I love the idea of added nutrients and pretty color, but i do NOT like the taste of sweet potatoes. LOL
