A great staple for your canning pantry. Easy to do and great for have on hand for creating a quick and easy meal.
5 lbs. waxy or boiling potatoes (white round or red skinned work best - Russets and Yukon Gold are not good choices). Scrub, peel and rinse then cut into chunks or leave whole if less than 2" in diameter.
4 t. salt
2 t. black pepper
2 t. dried rosemary, dried thyme and dried parsley
~2 qt. chicken or vegetable stock
Pressure can pints for 35 minutes, quarts for 40 minutes following all safe canning guidelines and manufacturer’s instructions for your canner, adjusting for altitude as follows:

0-1,000 ft 10 11
1,001-2,000 ft 15 11
2,001-4,000 ft 15 12
4,001-6,000 ft 15 13
6,001-8,000 ft 15 14
8,001-10,000 ft 15 15
This recipe CANNOT be safely water bath canned.

Thank you so much for sharing! I'm new to canning(59) and I appreciate the detail of the process. Sometimes it just easier(after you read how in the ball book) to watch someone do it. I bought a Carey smart canner and I'm loving it so far. Potatoes, carrots and salsa so far in the past couple weeks😊

I am So Glad that you are Careful to follow SAFE CANNING GUIDELINES. It makes me Crazy when I see other channels telling people how to Can and they aren't using SAFE TECHNIQUES, Just telling people to do it the way Great Aunt Bessie did.

I finally found white potatoes and bought 20 lbs. just finished processing them. I packed 13 1/2 quarts. I tried the blanching potatoes ahead of canning before and was disappointed with my results. Watching your video encouraged me to try this version for potatoes and i sm well pleased. Potatoes go bad too quickly and this is a great option for preservation. Love my All American canner. The 915 is perfect size for my family

I’m a little late to the party! Lol I am canning these today. I had about 1/2 cup leftover potatoes, so I cooked them up and tried them while the canner is going. Oh. My. Goodness. A-MAZING! I recently used a jar for mashed potatoes. Not quite as good as using fresh but still quite good. I used the leftovers to make patties for the next dinner. Those were also good.

Hi Carol. I just came across your channel and have finally found THE METHOD I am going to use for my first crack at canning potatoes. These look delicious and you did an amazing job of explaining everything. I especially love how you also showed how to mash the potatoes and do homemade gravy with the stock in your other video. Aussie Prepper hi! This recipe along with other seasoned veggies is at the beginning of the pressure canning section. It’s in a table context (if that makes sense), not a stand alone recipe. Lots of great ideas for seasoned veggies 😍

I have canned red potatoes with great success. I live in an area where they are plentiful and more affordable than others by far.

I can potato’s every year and have can different varieties with good success with each one. I always soak the potatoes in lightly salted cold water for a couple of hours which draws out a lot of the starch other wise you will have starchy substance in the bottom of your jars. Doesn’t look appetizing Works well for me but to each his own Happy canning y’all

This is wonderful to be able to Pressure Can Potatoes. Open a can heat and make mashed taters, or mash adding salt pepper, onions, a shot of mustard, eggs, and whatever else you put in your Potato Salad. Just so easy.

Looks great! Perfect timing, canning potatoes is on my canning "to do" list for the next week. Since its my first time i was wondering how many jars I would get from 5 lbs (now i know! THAN YOU! :)). Have you ever done a video of your pantry? Show us and tell us some of your must have's and some of your favorite recipes on the shelf? Always looking for ideas, this is my first year of full on canning and I may be a little obsessed with it :)

LOVE how you give quantities to expect when canning. As a newer canner that's what I have the most trouble with! I can follow all the safety techniques and steps and procedures easily but I end up over buying my produce every time. Not that it's a bad thing sometimes, just unexpected at times. What type of "hot broth" did you use?

Maria Donaldson gotcha 😉. Depending on what you’re canning you will need a certain amount of “headspace” which refers to the unfilled space between the food and the lid. For jams and jelly it’s 1/4” so you can fill your jar to 1/4” from the top. For fruit and tomatoes it’s usually 1/2” and for pressure canned food it’s 1”. The lines on the jars are really there to measure the amount of food in the jar in 1 cup increments. You won’t really use this for filling your jars. I want your hair and I'm a guy ! Thanks for posting. I ordered a huge jar of Herbs de provence, from Amazon - never got it, and never got a refund. Oh well. Have to try to buy that locally. I'm going to can some red potatoes with knorr powdered beef bullion. I love canned potatoes, even the cheap store bought ones, they have that nice canned taste. I like how they are already cooked, and you can make soup, slice them into your soup, heat them for 2 or 3 minutes and you are done. Plus even if you forget about them in the jar, they don't sprout and start to grow like they do if you forget about them in the pantry or fridge. I bet these would have tasted nice with a bit of onion and garlic in the jar when you canned them.

Hello! I'm a new subscriber and love your videos! I am almost 55 years old, but new to canning! I have been canning plain potatoes with water, but LOVE this recipe! I have not yet made my own chicken broth. Can I use organic store bought broth instead of homemade?

Rose Ashworth these did not (I used white round here). I’m guessing it was the potatoes you used (white round or red skinned work best. Russets and gold potatoes have more starch). If you used the hot pack method you could try using hot broth as I’ve done here or fresh hot water instead of your blanching water. Hope that helps 😊

Oh my Carol, just found your channel. This is my first video and I loved it. I have not canned anything yet, I am thinking this recipe will be it. Your instructions are very clear. One question, well two I guess , Does the broth have to be home made and can it be be veggie or onion broth from the store? I have not canned anything yet and I am a little overwhelmed. If I could use broth from the store that would be great! Again, thank you for great video. suzie

t d mix together equal parts dried thyme, basil, marjoram, fennel, oregano, savory and rosemary (herbs de Provence also includes dried lavender but that can be hard to find). Store in an air tight container 😍

Hello☺️question I didn’t see in comments below. Forgive me if I missed it somewhere. If you balance the potatoes first, does boiling a bit first help take starch out and not make the potatoes canned so starchy? Raw packed make to much starch in jars? Thank you for clarifying. 💕

I used white round potatoes which aren’t very starchy. If you use russets you will want to soak them first. 😊

Hi I’m really enjoying your videos, I’m loving canning & I also have the All American canner 921, my only issues is that I’ve burned myself on the steam three times, so now I’m paranoid. It has burned me thru oven mitts, any suggestions? I’ve been told to not wait the ten minutes because you never used to do that but I prefer following rules, maybe I’m waiting to long to start timing the ten minutes?

Susan Parsons hi! Venting is important so please don’t skip it. I know it can be tricky to get the weight on quickly to prevent getting burned. Try doing it from the side with your right hand instead of lifting it directly above the stream of steam from the front, if that makes sense. You should be able to get the weight on quickly enough to not get burned. You can start timing as soon as you see a stream of steam coming out of the vent. I hope that helps. 😊

Thanks for responding, actually I was using my right hand so now I’m using my dominate left hand & have been coming in from the side, much better, more comfortable, put a glove on instead of a mitt, so hopefully I will get back to feeling confident again. Love my canner & your videos. I’ve been canning away, keeps me busy & my husband who has Alzheimer’s has been helping me by mostly cleaning up for me & keeping me calm. Who knows what this winter will bring, so I will have an easy time of preparing meals because of all this canning. I even made French onion soup for the first time & canned it for him, I don’t like it but I found a video for Clam Chowder Base to can which is the exact recipe for Rhode Island clam chowder which is pure broth so as soon as the humidity goes away, I will be getting some fresh quahogs & make up a bunch for winter.Thanks again, you are a good teacher.

Kelle Stanley yes! But the processing time for carrots is 25 minutes for pints and 30 minutes for quarts. You may slice, dice or leave them whole 😊

Is white potatoes the same as russet potatoes? Can you use gold potatoes, less starch in them.

Russets are a starchy potato. White potatoes are waxy and hold up better in canning but russets can be used

With Covid keeping me indoors, I decided to clean out the pantry and replace some of my stock.. Now your potatoes and bourbon chicken are sitting pretty there. Gonna put your bacon/bean soup up next. BUT, how do you USE the potatoes?

They’re great just reheated with butter, you can mash them (I have a video), slice them and fry them, they make a great prep for potato soup or potato salad 😊

thaks for being so detailed, I wanna ask, I did the potatoes in an onion broth and used my brand new All American pc @ 40 mi. the bottom broke off a jar, I dont understand why they were quarts and there was 7, also can I do this in pint jars?

Jars break for these reasons: thermal shock (putting a cold jar in hot water or vise versa), weak or old glass, the glass is cracked or you used a jar not specified for canning such as reusing a commercial jar. I know others who have had a jar break during processing. And you may can potatoes in pints for 35 minutes 😊

Only once I had a jar break & I think it’s because I screwed the lid on too tight which didn’t allow any release of pressure hence the break. That’s why they say “finger tight”.

There’s no set amount of liquid. That’s why they mixed them with the potatoes. The amount of liquid needed will depend on how full your jars are. But technically, yes you could 😊

I’m doing 7 quarts so Kim going to mix all the spice’s together and divide by 7 and just add to jars, 20lbs is too much to stir up lol

Fresh herbs don’t can as well as dried but you can use them in pressure canning. However they should not be used in water bath canning unless called for in a tested recipe. Yes, you can safely add carrots 😊
