Homemade Vegetable JUICE (V8®-style) from the Garden!

Wondering what you can do with all those end of the harvest veggies that come in, when you have enough of everything else processed? Turn them into a nutrition-packed juice that can be a drink as it, or a great soup base.
MY RECIPE:
Makes 11+ pints.
6-8 lbs ripe tomatoes and juice, cored, chunked (remove bad spots)-add after other veg to equal 7-8 qts in stock pot
2-3 large bell peppers, cut into chunks
2 med-large onions, diced
2 cloves garlic, minced
2-1/2 to 3 C chopped carrots
1 head celery, sliced (yes, the full package-stalks only)
optional veggies: beets, spinach, kale, horseradish to taste
1/4 C fresh or 1 T dried parsley
1/4 C fresh or 1 T dried basil
1 T sea salt
1 tsp black pepper
2 bay leaves
1 T coconut aminos or Worcestershire sauce
2 T sugar
1/2 C lemon juice
Directions:
Stir to combine in large stock pot or bowl.
Cook on the stove top for 30 minutes, OR transfer 1/2 of mixture to the Instant Pot (or other electric pressure cooker). Cook on manual for 18 minutes. Natural release (may need to help release after 30 min). Pour into another pot or stainless bowl. Repeat with remaining mixture.
Optional: fill roaster with mixture. Cook for 4 hrs at 250ºF.
Let all mixtures cool until slightly warm.
Remove bay leaves. Run all mixture through a food mill, fine mesh strainer, or juicer. Pour contents into clean pot or large bowl. Stir to combine well. Taste for proper seasoning. No need to reheat since pressure canning.
Fill pint or quart jars to 1/2-inch headspace. Clean rims and add lids. Tighten rings to finger-tight. Pressure can 20 minutes for both size jars.

My friend cans beef, carrots, potatoes, and onions, etc in V8 juice for beef stew. Haven't tried it but it sounds amazing.

I absolutely appreciate your candor and honesty I’m single I don’t have anybody to help with this beautiful bountiful harvest that I have and I have to tell you I am absolutely overwhelmed a sense of shame that I am letting things go to waste while I’m trying to maintain an urban garden small vineyard and all the activities of daily living. this is amazing, it looks sooo good. We love V8. Thank you for sharing this recipe, how I wish I would of thought about this. Have a young mom that I know that it was her 1st year of gardening and she was flooded with tomatoes, she does not can yet. I took some of her frozen tomatoes and canned for her. She has a WB and pressure canner she is just afraid yet, she has a large family. This would work amazing for her as well. Going to check with her and see if she still has tomatoes in her freezer. I am going to keep this recipe and give it a try for us and for this other family. She has 7 kids so they would use it well. Bless you and your one busy lady and Ms Green Thumb for sure.

Cathy this is so neat! I love this! I have a tomato juicer to make sauces I got for Christmas I grew up on homemade sauces my father was Italian so he cooked. This is so necessary to make your own then you know what is in your food. So much better! Blessings! Wendy🐝🐞

You could also roast those tomatoes, then can them which will replace your canned tomatoes from the store. Last year, I canned 24 jars of roasted tomatoes

That’s what I do when I make sauce. I just had more than enough sauce and needed to do something different with the rest of the tomatoes.

Cathy, Thank you for this terrific video. As a fellow canner of V-Eight juice, I really appreciate your great ideas on using the InstaPot and Roaster to process the batches. Thanks also for the ingredient quantities on a 'per pound' of tomato basis. Btw, it is a pleasure to listen to you share your process for using up garden tomatoes because it is apparent that you have a kind and sweet personality. On a side note, i just recently starting using my immersion blender once the veggies are tender and just before i strain the product into my jars for canning. it works well to thicken the juice.

Cathy - love the juicer, it really did a nice job taking out the liquid. I see it's a Hurom, what model? I'm having to run my scraps through several times to dry get out the liquid and I think it's time for a change. Bravo on the instructions!

I have one quart of juice left over from making Chow Chow relish. (Green tomatoes, cabbage, bell peppers, sweet onion...juice from raw veggies) Can this be used with red tomatoes to make V-8 juice?

Hi Cathy, just discovered your videos. NICE! We live in a suburb and try to grow mostly heirloom or open pollinated veg. In our backyard. Can you tell me what variety your gorgeous big beefsteak type tomatoes are in this V-8 video? We are still trying to narrow down which varieties we want to grow and what will be happy in our climate and our soil. Thank you for sharing your journey!

Thank you and you're welcome! I've actually grown a variety of hybrids and they've done very well. I just like growing beefsteaks because I get a lot of tomato for less work :)

I tried canning my tomatoes using Himalayan salt and most of the jar lids basically exploded because of the minerals in the Himalayan salt.

This is a delicious recipe. I don’t think it would make a difference because it all has to get cooked down. I would try it with just a single batch and see how it tastes.

Does the juicer grind up tomato seeds or separate them out?

It seemed to separate them out. After cooking, they were quite soft so they seemed to be part of the mash.

Water bath canning tomato juice should be 35 minutes for pints and 40 minutes for quarts, but double check with your extension service for your altitude.

I'm in SE Nebraska is 10 psi for 20 mins correct.

The psi will depend on your altitude. Ten will be okay up to 1000ft, but if you are over that, use 15psi. I don't remember the time, but 20 min. sounds about right. Check your canner's instructions for tomato juice.

I have not. I’m sure it would alter the flavor but if you have enough of a tomato base, I wouldn’t think it would overpower it. Experiment!

So the Brad’s atomic grape, I’ve been eyeing it for two years now, is it as prolific as cherry tomatoes? Am I going to be overrun? They look like the perfect grape size tomato!

They are prolific, but as I have never grown cherry tomatoes, I don’t know how to compare them. I did keep my tomato plants trimmed back but those insisted on spreading anyway 😉. Stake them well.

@@northstarprepsteader every time I have grown cherry tomatoes (I much prefer grape tomatoes personally) I was overrun, I could not keep up with consuming them!! I made salsa, roasted sauce ate fresh, gave a bunch away and got tired of them before they stopped lol.

When you can straight carrot juice, you lose a great deal of the fresh nutrients. Research says it's better to freeze it to retain the goodness. Otherwise, if you need to can it, pressure can it according to your canner instructions.

Yeah this looks good but the amount of effort just isn’t worth it to me. Time is a very valuable resource that more of can never be created so it’s a no but I damn sure would easily pay 15 bucks for a jar if I saw it at the local farmers market.

Could you not just put it ALL through a food processor? I want all of the pulp, which would give it the right consistency right?
