The gardens produced so much this year! It's so much fun to see the differences between varieties and wait for the biggest of produce. This year dad hoped to grow enough tomatoes to make his favorite vegetable drink. Here's the recipe from Don and Julie:
Vegetable Juice:
Ingredients:
- 2 cups celery (1/2 a bunch)
- 2 cups carrots (1 lb)
- 1 medium beet
- 2 large onions
- 2 to 3 cups pepper (3 peppers)
- Tomatoes to fill a roaster
- 1/2 cup lemon juice
- 3 Tbls canning salt
Directions:
- Prep all of the vegetables, chopping into medium size chunks
- Add everything to the roaster and stir
- Set roaster to 225 degrees for 12 hours, stirring a couple times
- Once vegetables are softened, blend in small batches and run through a sieve, strainer, etc to remove any skins, seeds, strings, etc
- Return juice to roaster, mixing again and reheat until heated through (roughly 180 degrees)
- Process quart size jars in a water bath for 35 minutes

I absolutely love watching you, I have looked at many videos and your is the best. 😊 I have added some more things. Parsley, bay leaf, Worcestshire sauce, and 1 or 2 cloves of garlic. I am using 2 pecks of tomatoes 🍅 😋

Love the video. Very informative. I'm made my first small batch last weekend and drank it all already. This weekend I'm gonna do a large batch. I thought I had an over abundance of tomatoes this year but when I heard you say you've already made 180 quarts I laughed out loud. That is a lot of v8 juice! I love it though and drink it almost every day. Love it with half v8 and half a beer. Kind of like a beer bloody Mary. I loved your video your obviously enjoying yourself!

Thank you so much for watching! He's really gotten into it the past few years and absolutely loves it. I think he enjoys the calm process of washing, chopping, etc and especially enjoys the delicious product at the end!

@@GardenHands I added garlic, parsley. After I put the veggies and tomatoes in the blender, I strained it all. Then I thought I would put all the veggies, (after the blender) I mixed it all together and brought it to a boil in my pot. Then canned it. Made it a second batch and added clam juice.

I love your kitchen. The roaster and your sieve. I have one just like it from my grandmother. However, I don't have the wooden part. Somehow, that got lost when the housekeeping was broken down. I don't like V8 Juice from the store. I'll try your recipe and see how I like that. Thanks for sharing.

I love V8 juice, but my doctor said I should not have it due to all the salt. Thanks, because now I can use my tomatoes to make my own. I am planning on making my own Rotel with my tomatoes, but now I have something else that I love that I can make with my tomatoes. Very good directions, and explanations. Thank you for this video!

I’ve had gut probs for years. OJ tears it up. My doc is stumped as to why tomato/V8 juice really smoothed my gut out. Salt and all. Who knows why? It works!!!

Be careful not to tilt your jars until they've sealed. You tilted them bringing them out of the pot.

I absolutely love your video, it is very informative, and love laughing with you. I wanted to try making tomato juice. 🍅 I have done it a little different than you, but it is delicious. Awesome video! I’ve checked out a few “V-8” videos, and this one is by far the best! You explained & SHOWED ever step perfectly! Also, your juice looks appetizingly RED. (Too many have that brownish tinge and don’t quite look as delicious) …..they say, we eat with our eyes…. I am really impressed with this tutorial, and will keep this in my “to-do” pile Thank you!! [a tip]. If you want your cutting board to stay in place, put a dish cloth under the cutting board, so it doesn’t travel. It’s easier on your arms & shoulders. LOVE THIS, ❤❤. xo e.

These homemade V8 juice videos always makes me laugh!! Because in V8 there is not only tomatoes, carrots, celery. But there is also parsley, beets, lettuce, watercress and spinach. No peppers! I am sure this is nice but it really isn't V8 and it isn't as nutritious as V8 either! Still a very nice video and I enjoyed watching!
