Whole milk ricotta
- Heat a gallon of whole milk to 190F, do NOT overheat.
- add 1/4 cup vinegar, citric acid, lemon juice, or ACV...stir for a minute
- Turn the heat off and wait 10-15 minutes for the curd to separate
- Strain through a cheesecloth & hang the ricotta to drip for 5-10 minutes
- Add some salt to the ricotta & serve or store in the fridge

I absolutely adore your videos. When I wake up in the morning and see you have posted something, I am always so excited. Your videos are so relaxing to me and provide such wonderful recipes and information, too. I live on the west coast of Florida within city limits, so I am unable to enjoy all of these firsthand. However, watching you brings me a sense of peace as if I was there with you, and I cannot tell you how much I appreciate these videos and appreciate you. ❤️

I love that you use carrots in your sauce. I frequently mix extra veggies in mine and butternut squash is one that works a lot like tomato paste for me to thicken up my sauce. I would have never thought to put a cookie sheet over the lasagna. What a great way to cut down on aluminum foil usage!

The deep red and purple heirloom tomatoes are best for sauce and canning. Cooking them down they almost have notes of wine in their depths.

i've been playing around with pasta making for the last few months. i need to get myself one of those pasta rollers/cutters i can do a decent job rolling/cutting them by hand but its a bit more time consuming than i'd like and i think i could get them a bit thinner with one of those. and i agree you can't go back to store bought lol. nothing better than homemade noodles/gnocchi

You are a amazing Woman Steph. The food looked fabulous !! I use to make homemade lasagna ( not the noodles or cheese but the rest. Took quite a while for the sauce. I guess I should of just said I made sauce. Lol You definitely can taste the difference with homemade. Excuse me but did you say you were pregnant? Or did you mean past tense ? I was thinking how it seems most people ( at least in my world ) don’t cook homemade anymore. It’s sad how those skills are being lost. I was lucky to be a full time homemaker / Mom. Seems so long ago….God bless your family 🤗

Your vegetables look amazing so fresh! And your lazzana and pie !! 🤌 Also my family and i use a TON of garlic its a natural immune booster as well you could finely chop with jalapenos if you like..? With tad of raw honey And make a jam! When i was preg it was a highly craved snack 😋 Anyhow .. thanks for sharing another great video! Btw my husband would be exactly the same coming home from a 14hour+ construction shift.. and not enough meat! 😶😅 Lol i hear you on that one!!🥴 I love that you start your day cooking and preping as i have to too some of my family and friends dont understand when its only 8am and after breakfast im already beginning dinner.. but as a busy stay at home mom of 4.. its only so im not in full rush at the end of the day.. and everything is ready for when the hubs gets home thats pizzaz!✨❤️ Haha "i use that all the time around here now my oldest daughter uses it 😂 GodBless!

Do you happen to have a video for your yogurt? I also do raw milk yogurt, and I would love to see how you do yours. Like how long you let yours incubate, what starter do you use, is it cold start, etc. Thank you!

How do you keep the raw milk from killing your starter? I've tried a couple of times and always end up with very watery and not tangy yogurt.

@cherivanmeter6195 I pour my milk into my instant pot and stir in my starter. So far, I've used plain yogurt from the store as my starter. I do not boil, or scald the milk. I hit the yogurt button once to display the incubation time, which I set for 12 hours. As soon as it's done I remove the lid, and top with foil or a plate. Do not stir. I let it sit in fridge for 12 hours. Then I strain through a cheesecloth to thicken just a bit more. It's very creamy. Sorry for the long answer, but I know when I was researching it I wanted details! Hope that helps.

I don't have an instant pot, but believe she did her yogurt in one, with gelatin to firm up, set it for 24 hrs.

@@MarfaPavlovna I have also seen people do it without an instant pot. Although I have never tried it, it seemed rather simple. Just pour your yogurt into a heavy bottomed pot on the stove top. Heat slowly to 100-110 degrees, and remove from heat. Stir in your culture, and mix well. Wrap in a towel to help hold in the warmth. Put in your oven with the light on. Do not turn the oven on, just the light. That should generate enough warmth to allow incubation. Let sit in oven up to 24 hours. You can refrigerate for about 12 hours, and then strain to further thicken. Everything was the same except incubation. Instant Pot or oven. Both were just holding temp so they could incubate. I have never had to use the gelatin. Once it is refrigerated, and strained it is thick and creamy. I will keep that in mind for sure though. Thanks!!!

Yesterday at work i met your doppleganger. She looked SO MUCH like you i legit caught myself staring and had to go back to one of your videos to compare faces. She's also a nurse... However.... SHE IS YOUR ANTITHESIS!.. not health driven, not in any way interested in homemaking or homesteading.. what was odd is that there was something about it that rubbed me wrong and i knew it in about 5 seconds... Yet.. She looked JUST LIKE YOU so my brain was so confused... But I'm like.. No way it's her cuz... These two women are nothing alike. So.. Unless you have a twin sister nurse in North Texas... Then I'm gonna just say you have a dopple ganger lol.
