2 pounds ground beef
1 1/2 pounds italian sausage
1 onion
6 cloves garlic
1 # Lasagna noodles
2# if needed
2 28 ounce cans crushed tomatoes
2 c. beef broth
8 oz. tomatoe paste
1 T. basil
1T. parsley
1 T. garlic powder
1 t. Salt
1 t. Pepper
1 to 2 t. sugar
6 cups mozzarella
filling
2 eggs
32 oz. cottage cheese
1 c. parmesan
1 c mozzarella
1 c. mozzarella
1 t. Pepper
1/2 t. Salt
1 t. basil
1 t. parsley
recipe Salisbury Steak
2 onions
5 cloves garlic
2 # ground beef
1/2 c. bread crumbs
1 t. Salt
1 t. Pepper
1 t. garlic
1 t. onion powder
1 t. parsley
2 T. worcestershire sauce
1 egg
2 T. oil
mushrooms
1 T. worcestershire sauce
4 c. beef broth
1 /4 c. flour
slurry
2 T. flour
2 T. water

Hello Miss Lori! I've been a subscriber for about a month or so, long enough to watch several of your videos. I wanted to say thank you for such a AMAZING channel and I'm so thankful I stumbled upon it. I love the fact that it's a God loving , down home cooking, with delicious recipes like my momma, Grandma( who was born and raised in Arkansas) or I would make. I love yours and Mr. Brown's loving and sweet personalities. It's like visiting part of my family virtually :) Thanks so much for opening up your home to us all, and giving us a glimpse into your lives, and sharing a portion of your day with us. Also, for talking to us like family, or a neighbor in your home sitting around the table for coffee, and a good ole chit chat. Your truly a special type of person. Ms Lori, I’m 66 years young and I don’t cook my noodles. Been making lasagna for over 40 years with uncooked noodles. The only thing to remember is cover the noodles with sauce. It makes assembling so much faster and easier. Thanks for your fabulous videos. You and Mr. Brown are a blessing. 🥰

They even make special noodles for that, don’t recall the name but they’re great for putting in dry! Oven ready or the like they’re half cooked!

I make freezer Lasagna using regular uncooked Lasagna Noodles- I just make sure my sauce is not as thick as it would be if I was using the cooked noodles. I've done it that way for years.

Yes it tastes much better letting the pasta cook in the saus and cheese.

When we brought Angie home on hospice, one of her girlfriends spent hours preparing freezer meals. and tons of breakfast burritos for us. It was such help.

I was a Hospice RN for 17 years. It was so sweet seeing friends and family support our patients and their caregivers, so often with meals.

Love this show! It is just my husband and me now, I often said, I just can’t cook for two. So I started putting the extras up in the freezer. Then started making extra on purpose! Mrs. Lori our lives are similar but I’m now retired but busy at home and helping with yard and garden work. I also like to do canning and preserving. My youngest granddaughter is graduating from HS this year and then off to college. Life will slow down some more, and lots of days I’m ready for a slow down actually ready for winter for those slow days. Love freezing soup, we often eat just a hearty soup for our dinner, and a slice of bread or crackers. Life I good, God is Great 👍

This was in my day was called "cook once eat twice meals". I cook now for one but freeze micro ready meals for one. Much better than eating out.

I love the idea of just doing an extra meal every so often. I have tired doing weekend preps and I just find it so hard. The idea of just doing it little by little would work for me so much easier. I am so glad I found your channel!!!!!♥️♥️

I love your idea of freezing cooked lasagna noodles! We also keep lots of Dollar Tree foil containers with tops on hand. That smaller size you used is our favorite for sending home leftovers for family and friends 💞!

When my grandma died, I made up about 7 different meals and divided each into good-sized single serving freezer containers and packed my grandpa’s freezer with them, writing the instructions on each container for reheating or baking. It supplied him with meals for about three months while he learned how to cook for himself because grandma had always made even his snacks. He talked about those meals to people for a very long time afterwards.

I'm a huge believer in cook once eat multiple times. Especially things that take time. Soups, sauces, stews etc. Freeze it up in meal size serving containers, like enough for a meal for us. Boom done.

So with the soups and stews or roast you can it in one serving containers in case one wants stew and someone else what another item.

@@christinainmichigan6726 Sometimes I freeze it in individual servings (like if I’m giving it to my single brother) other times in family size. And sometimes I do both! Soups I feel like potatoes and pasta don’t freeze well, so I often leave them out until we are actually eating it. So like last month I made homemade chicken orzo soup. I froze some for my brother it was complete minus the orzo. So all he had to do was thaw it, bring it to a boil, toss in the dried orzo and simmer a few minutes. I only see him like once a month so I’ll freeze up individual portions when I can so he can have home cooking for one anytime:)

I love watching you cook. I too love cooking once and eating off of it multiple times. I make my husbands lunches throughout the week and always cook extra meat, breads and cookies and throw them in the freezer too. Freezer meals sounds like a great idea to me! I've never made any freezer meals but I sure am thankful for the vegetable beef soup we canned over the summer! Open a jar, heat it up and homemade soup for supper! Love y'all Mrs. Lori!

I love the format Miss Lori - with you adding the voice-over after. I do frozen meals too, just for the 2 of us - because some days, I just don't feel like cooking (aka: lazy 🙄) Tip for lasagna - I don't pre-cook nor do I buy 'oven ready' ones. Just use them right out of the box, but break them a little smaller & leave a bit of space in between noodles, since they'll expand as it's cooking. I make my sauce looser on purpose, so there's enough liquid for the noodles to suck up. ~Hope you and Mr. Brown are well & staying safe 💕 ~Greetings again from Canada 🇨🇦

I have a tip...add about a tablespoon of olive oil to your boiling water when cooking any pasta...prevents sticking! Blessings 🙏🏻💖

I used to do once a month cooking for my very large family. Now all my kids are grown and my husband died so it’s just me. It’s hard to cook for just one when you are used to cooking for 11. I started watching videos about cooking and freezing for individuals. Now my side by side freezer is full of homemade meals instead of TV dinners! It is so exciting to go to my freezer and choose what I will have from healthy choices! I would encourage anyone to do this! I’m a great grandmother who is handicapped. If I can do it you can too!

Offer to do some freezer meals for your busy daughters/grand-daughters. Get them to drop off ingredients and containers and enjoy your home cooked meals.Your experience is invaluable and you'll feel useful and appreciated!

Purist italians do not use cottage cheese or ricotta. Our lasagna is made with a beautiful bechamel sauce, and then of course, the secret is in the sauce. Layered with mozz, parm, I top with buffalo mozzarella. Your sauce looked lovely, Miss Lori.❤🇮🇪🍀

Yes I was always taught to make a bechamel sauce for lasagne (and not to be stingy with it either lol). However this method looks intriguing and I just may have to try it too : )

Yes, Lasagne alla Bolognese, made with a ragu and bechamel, is considered classic lasagna in Italy, and common in the north and central areas, having originated in the Emilia-Romagna region, but as you go south you get other varieties. In Naples, you'll find Lasagne di Carnevale, or Neapolitan carnival lasagna, layered with a pork based meat sauce, meatballs, mozzarella, ricotta and sausage. In Sicily, you'll find Lasagne alla Norma layered with eggplant, ricotta and a light tomato sauce. There's of course other varieties as well. I'd also point out why I'm switching between 'lasagne' and 'lasagna', for other readers. In the Italian language 'lasagna' is singular, meaning one lasagna noodle, and 'lasagne' is plural, or more than one, so in Italy its 'lasagne' unless someone has made the dish with one noodle lol....but outside Italy its just called 'lasagna' and more familiar with people so when using English translations I stick with 'lasagna' to avoid confusion and explaining this every time.

I just did 3 loaves of it in the freezer. Froze the metal pan covered with plastic then took out the next day and dumped from pan and vac n sealed in bags.

At dollar tree they sell no boil nodles you just take out of box make your pasta recipe I make four at time save time you don’t have to boil

I have to admit to doing this when my children were small, but as they grew and moved out on their own, I stopped. Thanks for inspiring us to do it again! I made up freezer meals before my last baby was born. I have always said that I was going to start doubling or tripling my meals so that I could freeze em, but we always end up eating the leftover during the week! 🤣 Thanks for sharing!

This is what happens here too. I still double or triple, but the family is wise to my ways, and immediately says "don't freeze it!" before I have a chance to squirrel any away! Besides, no room in the freezers.

Yes teenagers are the worst, at eating any extras. With teens around, you can forget about getting ahead. 😥😀. But alas they will be heading on to their future soon, and then you will have lots of leftovers. 😕🥺

Only one of me but I still do freezer meals for myself. They are a life saver when your busy, for Shabbat, or for having a friend over you don’t have to cook you can sit and visit instead of cooking. I do it with desserts too. Thank you Miss Lori! GOD bless you all.

This is exactly what I needed to be considering ! I used to do a weekly prep and I actually tired of doing it when COVID struck, plus I began doing keto. I save leftover gravy and sauces to put in my rice when I cook. I also keep a container in my fridge for 'bits of veggies, leftover cheese bits, peppers and such) that can be used. I guess I learned to cook from a depression era mom and nothing was wasted.

Great way to fill the freezer. I used to do that when we had a family at home. But, now, I still freeze leftovers. It is just smart. Where did those 62 years of marriage go? I miss my husband so much. Real glad I have my kids. The years fly by. Enjoy every day.

My elderly mother is living with me. But we still cook "family sized" and freeze portions for meals later. We even have biscuits and rolls in the freezer.

I do freezer meals from time to time. I'll cook up a big turkey or chicken then freeze it up in portions for my husband & I. We do lasagna also, and soups, stews, etc. I bake cookies, cakes, frostings, and freeze them up also (in ziplock bags or freezer containers). Tonight we are having Meatball Subs. I take two long "hoagie" rolls out of the freezer to thaw, meatballs from the freezer, open a jar of tomato sauce, put the meatballs in the sauce and warm up. Slice the hoagie roll lengthwise, add the meatballs and pour tomato sauce over, sprinkle shredded cheese on top and stick in the broiler until browned on top. This is quick and easy. It helps after a long day of work. Best part is, it's homemade and not "fast food" from a fast food restaurant. I sure look forward to more ideas from you. This is a great topic!! Thank you!!!

When I make chili and Spanish rice and those types of things, I like to use my foodsaver and freeze those bags flat to save space too and drop the bag in a pot of boiling water to reheat... Homemade dinner in 15 minutes 😀

Ms. Lori I made your white bread tonight and it was so good. It turned out so soft and delicious. I cooked supper for my son and daughter in law and we had a wonderful meal. Was a learning lesson of sorts for me today, when watching this. A couple of reminders of a shortcut or two, along the way. After I was divorced , with 2 young girls, an extra meal in my freezer, helped tremendously. The older daughter woul read on the outside of the pan, what was inside of it. She age 8, & her sister age 4, alway was the one to decide what was going to be thawed out for the next day’s meal. Was so easy. Then as they became older, I would be receiving more “volunteer” help from them. Was so nice to have a cooking lesson, & precious time together. Yes, it could be a bit more messy ever now & then, but it didn’t kill me. I’m now 67 years old, an amputee, & I still do the “fix ahead meals” when possible. It just takes me a bit longer when I do it, & pretty much each time, I reflect back on the 3 of us girls in that kitchen during those years. No regrets whatsoever…😉💕🇺🇸

I had 7 people in my family. When they all left (2 still at home working crazy hours). I couldn't decrease my recipes🤣. Then diagnosed as a diabetic. I use the 1 lb tins for myself and the 2 lb tins for the young men working. On Saturdays I make two recipes and may double them. After a few Saturdays, you have a great variety. We do cook about 3 - 4 meals a week and the other days, pull from the freezer. Tip, the 1 pound tins fit in the Instant Pot, take them out and put loose foil over them so water doesn't get in and cook for 5 - 6 minutes. If the meal needs browning pop them in the oven for a bit. @@jhwilliams6550 Yeah, each meal you freeze is a little different. For instance I made Shepard's Pie for the others with mashed potatoes on top, that took longer, not for me with diabetes. I made lasagna for me (cabbage instead of noodles, can use zucchini but I hate the stuff) and that takes about 5 minutes. Little longer uncovered in the oven so some of the liquid goes away from the cabbage. Trial and error.

Mrs. Lori my MIL cooked 3 vegetables for at least 5 days or 5 meals and she refrigerated her biscuit dough in a tightly sealed bowl and then she made cornbread. If they wanted meat she would cook that one of the days to add to the vegetable and slice a garden tomato. These cook ahead items made it easier on her. She didn't have all 3 vegetables each night. Thanks for your wonderful video's including Mr. Brown (I enjoy his Bible readings and stories. Both of you are so Blessed to have each other. I can't wait for both of you to RETIRE!

I want to thank you for this video on freezer meals. It's always intimidated me, worrying that I haven't wrapped it enough to prevent freezer burn or it taking on unpleasant freezer smells. Love my Food Saver! I tried to make freezer meals to save time, especially when I worked outside the farm. I worked at school until I turned 70. Now it should get easier for me to start making freezer meals again. That salisbury steak looks yummy! Great idea!

I love how Miss Lori has two different teaspoons => One for all her ingredients, and a special one for her garlic, (or what the rest of us call a 'canoe paddle'). I love garlic too. I even like to use it as aftershave.

Freezer meals are the best when your feeling poorly or have an especially busy day coming up. On Sundays I over cook and freeze the extras.

I use pepperoni, mushroom, sausages, black olives, onion, hamburger, oregano in my spaghetti. Sometimes I don't use all those ingredients in spaghetti all the time but I will always have oregano, onions and extra hamburger in my spaghetti. Top with parmesan. Any variation of these ingredients my grandchildren love.
