I busted out laughing when you opened that oven. I am so guilty of that especially the older I get. I have been trying to figure out what to fix for just the two of us. I am definitely going to try this one with one exception - I'm going to roll with grandma's cornbread recipe. I could almost smell that cooking. Mr. Brown is right. Those onions and peppers cooking is a heavenly aroma. The title had me curious but you roped me in with the cumin and chilies. Can't wait to try it!! Happy New Year to you and yours. 💜

Same here, always smell the pan I stashed in the oven the last time I used it about the time the current recipe is ready to go in. I'm even guilty of stashing clean pans in the oven. I love b-e peas, but think I'll skip the canned tomatoes (sub more green chilis) & cut back on the cheese. Lori's idea of mixing the cheese in the cornbread is brilliant. Cuts down on the stringy effect of a layer of cheese. I love cumin & green chili's so mine will be a green version of this recipe. Thanks Lori for the idea. I cook for 1, so I'll use my rectangular pyrex dish & portion leftovers out to freeze for later. My temp for New Year's Eve is 7°F... At that temp pipes start freezing up. Reminds me of mid Feb last yr - even though I never lost power.
