Totally, it's true in also other businesses, not just running a restaurant. As they are those who spend the most time and being closest to both customers and the kitchen. But unfortunately, not many managers truly have management skills - and listening is one of that.

Based on them basically being a low-grade catering business, and cutting the steak into small pieces to put in burritos, I'm willing to bet they buy the cheapest cuts they can find, the ones only good for mincemeat. So even when cooked from fresh, it's going to be inedible due to excessive connective tissue. Imagine how much worse the precooked ones must be though. At least the one Gordon got was like WET cardboard, and the waiter still had to spit it out. The regular ones must be like dry cardboard, in addition to apparently being oversalted. I wish they showed us how long the owner and the chef had to chew those pieces they tasted before swallowing them. Or if they gave up and spit them out too.

The phrase means you don’t push extras when the customer declines you give them what they came there for. If the customer wants the chicken and you push the fish but they want chicken. They’re right, they want chicken. It does not mean those customers who go to restaurants with their stupid cue cards with a shopping list of allergies can construct your menu to their preference. It’s a television show so the waiter is doing what the producers instruct him off camera, but no real person would answer something like that. If someone did you just guide them to what you would recommend. What’s wrong with the menu is more appropriate when you have a meeting, not during service.
